You’ve probably seen this cottage cheese queso on social media and let me tell you, it’s viral for good reason!! This Cottage Cheese Queso Recipe is the best lightened up, high protein version of the cheesy dip we all know and love. 

This queso recipe is made with just 4 simple ingredients, is ready in about 5 minutes and is perfect served as a dip for your favorite tortilla chips or fresh veggies. You can also drizzle this cheesy goodness on top your favorite tacos or burrito bowls! 

Cottage cheese has been blowing up lately and I love that it can be added to so many different type of recipes. A few of my favorites so far have been my Strawberry Cheesecake Cottage Cheese Ice Cream, High-protein Cottage Cheese Scrambled Eggs or Cottage Cheese Mac and Cheese!

Ingredients and Substitutions

Ingredients for cottage cheese queso recipe.
  • Cottage cheese – I used 2% low-fat cottage cheese but you can also use fat-free cottage cheese or full-fat cottage cheese for an extra creamy texture! 
  • Taco seasoning – store-bought or homemade both work great! 
  • Cheese- I used shredded sharp cheddar cheese but really any cheese blend you like works! Use cheddar cheese, pepper jack cheese, monterey jack or a Mexican blend cheese, etc. I recommend shredding your own block of cheese if time allows as real shredded cheese always melts and taste better than pre-shredded cheese!
  • Rotel – any diced tomatoes with green chilies works. Or just use regular diced tomatoes for a mild flavor.
  • Tortilla chips – for serving 

Optional Variations and Dietary Adaptations

  • Ground meat: for extra protein add my mexican ground turkey or cooked ground beef.
  • Fresh veggies: for a lower carb option use this creamy queso as a dip for your raw veggies like mini bell peppers, carrots, or cucumbers.
  • Extra toppings: add pico de gallo, salsa, fresh cilantro, red onion, cherry tomatoes, green chiles, jalapeños, crushed red pepper more shredded cheese.

How To Make

The full printable recipe is below, but let me walk you through the process so you know what to expect when you’re making it!

1. Add the cottage cheese and taco seasoning in a microwave-safe bowl.

2. Blend with an immersion blender until smooth. Alternatively, blend in a blender or food processor then transfer to a microwave-safe bowl.

3. Stir in the the shredded cheese and Rotel.

4. Microwave 60 seconds.

5. Take out and stir and microwave for another 30-60 seconds or until the cheese has completely melted.

6. Serve with your favorite tortilla chips and enjoy!  

How To Store & Reheat

Store leftovers in an airtight container in the refrigerator for 4-5 days. To reheat, gently warm the queso in the microwave, stirring every 30 seconds. You can also reheat it in a saucepan over low heat. Add a splash of milk or water if the queso has thickened too much. 

This easy cottage cheese queso is best served right after making it. The consistency of leftover queso may change a little when reheated but it’s still delicious! I do not recommend freezing this blended cottage cheese dip.

FAQ: Creamy Cottage Cheese Queso Dip

Can I make this cottage cheese dip if I don’t have a microwave?

Yes you can make this dip in the oven or air fryer. To make, transfer the cottage cheese mixture to an oven-safe dish and bake or air fry at 350F for about 5-10 minutes, or until the cheese is melted. I recommend stirring ever 2-3 minutes to ensure even melting. 

​What should I eat this cheesy dip with?

You can enjoy this cottage cheese queso as a dip with your favorite tortilla chips or fresh vegetables. You can also enjoy it as a topping for these Carnitas Burrito Bowls, Chicken Fajitas, Chicken Taquitos , Salsa Verde Chicken Bowls or Chicken Enchiladas.

How do I get this cottage cheese queso to be smooth?

The key to getting this queso dip smooth and creamy is to blend the cottage cheese in a high-powdered blend or food processor before heating! If you don’t blend cottage cheese before heating, the curdles will not completely melt and won’t be as smooth.

Ingredients

  • 1 cup 2% cottage cheese (220g)
  • 1 Tbsp taco seasoning
  • 1/2 cup shredded sharp cheddar cheese (56g)
  • 1/2 cup Rotel diced tomatoes and green chilis (110g) drained
  • Tortilla chips for serving

Instructions
