Why You’ll Love These Chicken Caesar Pinwheels
- Quick & easy: Made with a handful of ingredients and ready in just minutes these pinwheels are perfect for busy days!
- Great for meal prep: Prep chicken pinwheels ahead of time and store in the fridge for a grab-and-go snack or lunch!
- Packed with flavor: Enjoy all the classic caesar flavors with creamy dressing, savory chicken, crispy bacon, and a hint of red onion.
- Crowd favorite: A fun, handheld way to enjoy caesar salad—great for lunchboxes, parties, or a healthy appetizer.
- Customizable: Easily swap ingredients to fit your dietary needs, from gluten-free tortillas to dairy-free dressing.

- Chicken: Any type of cooked chicken works! I love the hand-pulled rotisserie breast chicken from Costco! The Shredded Rotisserie Chicken from Target is yummy too! You can also use my Basic Shredded Chicken or any leftover chicken you have on hand.
- Caesar dressing: To keep these pinwheels super quick, I just used store-bought caesar dressing. However, you can also use homemade caesar dressing like in the caesar chicken wraps or this low calorie caesar dressing for a lighter option!
- Red onion: Adds a mild, slightly sweet crunch to these pinwheels!
- Bacon: I love the salty crunch the cooked bacon provides to compliment the soft tortilla and fresh ingredients!
- Parmesan cheese: HIGHLY recommend using freshly grated!
- Romaine lettuce: Crisp romaine is classic for anything caesar and I love the crunch the lettuce provides with the soft tortilla! Opt for hearts of romaine for the best crunch and freshness. However, you can use green leaf lettuce or any greens you prefer.
- Flour tortillas: I used a large burrito size flour tortilla from Wegman’s. Use whole wheat tortillas, low carb tortillas or gluten-free tortillas, whatever your prefer. Just make sure they are the large burrito size so all your stuff will fit inside!
- Low carb: For a lower carb option, you can use a low carb wrap like lavash, flatbreads, Carb Balance low carb tortillas, etc.
- Mix-ins: Add cherry tomatoes, croutons, or your other favorite caesar salad toppings to your chicken salad mix.
- Homemade dressing: If you really want to take these pinwheels to the next level, use my homemade caesar dressing like in the caesar chicken wraps or this low calorie caesar dressing for a lighter option!
How To Make
The full printable recipe is below, but let me walk you through the process so you know what to expect when you’re making it!

1. Make sure any large pieces of chicken are shredded fine and add to a bowl with the caesar dressing, red onion and parmesan. Crumble the bacon into small pieces over top and mix well.

2. Lay tortillas out. Divide the chicken salad in half–about 3/4 cup(170g) each. Spread on even across the whole tortilla (make sure extra isn’t in the center so it rolls up even). Sprinkle lettuce over top.

3. Dampen fingertips with a little water then tightly roll each up. If time allows, to make cutting easier, cover with a damp paper towel (or plastic wrap) and refrigerate for at least 15 minutes.

4. Use a serrated knife to cut into pinwheels. Serve with more caesar dressing if desired and enjoy!
Cover in an airtight container and keep refrigerated until ready to serve.
Helpful Tips
- Dry lettuce: Make sure to thoroughly dry your romaine (or lettuce of choice) before adding to your pinwheels to avoid it making your tortillas soggy.
- Even-sized pinwheels: To get even-sized pinwheels, make sure to spread chicken salad evenly across the whole tortilla and that extra isn’t in the center. Then the tortilla will roll up even, and you’ll be able to cut pinwheels more uniform in size.
- Refrigerate: If time allows, to make cutting easier, cover with a damp paper towel (or plastic wrap) and refrigerate for at least 15 minutes. Use a serrated knife to cut into pinwheels.

Can I prep these pinwheels in advance?
Yes, you can prep these chicken caesar pinwheels in advance and store in an airtight container or wrapped in plastic wrap in the fridge until ready to serve. Just note, the romaine lettuce might not be as crisp but they will still taste just as good!
What’s the best type of chicken to use?
Use any kind of rotisserie chicken, grilled chicken, or even canned chicken (well-drained). Just make sure to finely shred it to ensure even distribution in the chicken salad filling.
How do I prevent my pinwheels from getting soggy?
Make sure to use just enough dressing to coat the ingredients without making them too wet. If you like a lot of caesar dressing, I suggest dipping your pinwheels in extra dressing when eating instead of adding extra dressing to the chicken salad mixture or it can make your pinwheels soggy. Also, make sure to thoroughly dry your lettuce before adding it.
