These Sheet Pan Chicken Fajitas (with taco seasoning) are one of my favorite go-to recipes for an easy dinner that I can have on the table in just 30 minutes!
I’m telling you, Taco Tuesday just got so much easier! Not only are these the best chicken fajitas because they only require one sheet pan that cooks in the oven, but they use simple ingredients like taco seasoning mix to bring so much incredible flavor!
These chicken fajitas are tender, juicy and roasted to perfection. Serve stuffed in your favorite tortilla with a side of cilantro brown rice or cauliflower rice for the best meal. Or, use these chicken and veggie fajitas to serve over a bed of greens or in place of the carnitas in my Burrito Bowls recipe!
Not are these the best fajitas for a super easy dinner but they’re also great for meal prep! Use leftover chicken fajitas in a crunch wrap or for low-carb options serve in a bowl with your favorite toppings and enjoy all week long!

- Chicken – I used boneless skinless chicken breasts. You could also use chicken thighs for this recipe.
- Bell peppers – I used a red, yellow and green
- Red onion
- Olive oil
- Lime
- Taco seasoning mix – store-bought or homemade works! You’ll need two packs of store-bought or 2oz. of homemade.
- Fresh cilantro
- Tortillas – I used fajita-sized tortillas for serving
- Optional for serving: avocado, lime wedges, sour cream, salsa, etc.
- Add a can of corn! Such a easy way to add just a touch of sweetness and crunch.
- Steak fajitas! Use lean steak like thin strips of skirt steak in place of the chicken for a beefy twist!
- More veggies! Want to increase the volume and fiber? Add some broccoli or zucchini to your sheet pan!
- Change up your tortillas! Use corn tortillas instead of flour tortillas to mix things up (or make this recipe gluten-free)
How To Make
The full printable recipe is below, but let me walk you through the process so you know what to expect when you’re making it!
1. Preheat the oven to 400 degrees F. Dry the chicken, peppers and onions well with a paper towel then cut them all into thin slices. Add them all to a rimmed baking sheet.
2. Drizzle the olive oil and lime juice over top then toss to combine. Then sprinkle the taco seasoning over top and toss again. Spread the chicken and vegetables out over the baking sheet evenly in a single layer.
3. Bake for 18-20 minutes, or until chicken is cooked through.
4. Then broil on high for 3-4 minutes to get everything a little charred. Sprinkle with the fresh cilantro then serve with warm tortillas and whatever else sounds good and enjoy!

What’s the best way to cut chicken breasts for chicken fajitas?
Cut the boneless skinless chicken breasts into thin, even chicken strips for these chicken fajitas. This will ensure quick and even cooking.
What’s the difference between taco and fajita seasoning?
Although similar, taco seasoning typically has more oregano and chili powder than fajita seasoning, whereas classic fajita seasoning typically has more cumin. However, they are very similar and you can use whichever you prefer!
Should I cut the chicken before cooking fajitas?
Yes, it is helpful to cut the chicken breasts into strips (along with the veggies) before cooking to help ensure quick and even cooking. This also helps the fajita meat to absorb more seasoning for the best flavor!
Can I prep this recipe in advance?
Yes, this is a great recipe to prepare in advance to make cooking time even quicker! You can go ahead and slice all your fajita veggies and chicken into thin strips and store separately until ready to bake. Once ready to make, mix with seasoning and add to sheet pan.
