- Bell peppers – I used one red & one green bell pepper
- Pizza sauce
- Pillsbury Grands Biscuits – you can use any canned biscuits you have on hand/prefer!
- Shredded mozzarella cheese
- Turkey pepperoni

To make gluten-free: use a gluten-free baking mix to a quick biscuit dough and form into small balls to place in the greased baking dish. Here is a quick recipe for gluten-free biscuits for the pizza casserole.
To make dairy-free: use dairy-free cheese.
Ways To Switch It Up:
- Add more veggies (& fiber!) with mushrooms, cooked broccoli, onions or your favorite vegetable!
- Increase protein by adding more ground beef (I have added up to 1.5 lb and this casserole still works great).
- Switch up the protein by using ground turkey or ground chicken for a leaner casserole!

Bubble Up Pizza Casserole with Biscuits (High Protein, Kid-Friendly!)
Ingredients
- 1 lb lean ground beef I used 96/4
- 2 medium bell peppers finely diced – I used a red & green (can omit)
- 14 oz. jar pizza sauce
- 1 (16-oz.) can Pillsbury Grands Biscuits
- 1.5 cups shredded mozzarella cheese
- 1.5 oz sliced turkey pepperoni

Instructions
- Preheat the oven to 375 degrees F. Spray a 9×13-inch baking dish with cooking spray.
- Add the ground beef to a large skillet over medium heat and cook, crumbling as you go, for 3-4 minutes. Season with salt and pepper to taste (I added about 1/2 tsp salt and 1/4 tsp of pepper).
- Then add the diced peppers. Continue to saute until peppers are soft and beef is no longer pink. Then drain any and all excess liquid from the skillet and mix in the pizza sauce.
- Cut each biscuit into six pieces then place into the greased casserole dish. Add the beef mixture.
- Then top with the shredded cheese and sliced pepperoni.
- Bake uncovered for 25-30 minutes, or until biscuits have bubbled up and are cooked through. Cover with foil if needed to prevent the tops from getting too browned.
- Let cool for 5-10 minutes then slice and enjoy!
