About This Recipe

Do you love pizza? Do your kids constantly ask to have pizza night every night? If so, you absolutely have to try this easy-to-make, high protein, Pizza Casserole with Biscuits!

This easy weeknight casserole is made with only a handful of ingredients including ground beef, biscuit pieces, pizza sauce and cheese! That’s it! Then you can add all your favorite toppings like green peppers and pepperoni or whatever sounds good!

I love this pepperoni pizza bake because it is the easiest way to satisfy my pizza craving without all the mess. It only takes 10 minutes to throw together and the macros are WAY better!

The best part about this easy pizza casserole recipe is that it is also great for meal prep! You can prep this casserole in advance or freeze any leftovers for a quick meal another time.

Seriously, the perfect recipe for busy weeknights and one that will satisfy everyone in the house. Serve with a side dish of green beans or broccoli for a complete and balanced meal!

Ingredients and Substitutions

Ingredients for bubble up pizza casserole.
  • Ground beef – I used 96/4. 92/8 is also great to keep this dish macro-friendly, though any ground beef works. Ground turkey is a good choice too!
  • Bell peppers – we’ll use two medium bell peppers. I used a red and green one, but any color works of course! I added these for a little “health” but you could easily omit.
  • Pizza sauce – any kind works, use your favorite!
  • Pillsbury Grands Biscuits – or any canned biscuits you have on hand/prefer.
  • Shredded mozzarella cheese
  • Turkey pepperoni

Optional Variations and Dietary Adaptations

  • Make it gluten-free by using a gluten-free baking mix to make a quick biscuit dough and form into small balls to place in the greased baking dish. Here is a quick recipe for gluten-free biscuits for the pizza casserole. 
  • Add more veggies (& fiber!) with mushrooms, cooked broccoli, onions or your favorite vegetable!
  • Increase protein by adding more ground beef. I’ve added up to 1.5 lb and this casserole still works great.
  • Switch up the protein by using ground turkey, chicken, or a meatless option.

How To Make

The full printable recipe is below, but let me walk you through the process so you know what to expect when you’re making it!

1. Add the ground beef to a large skillet. Cook over medium heat, crumbling as you go, for 3-4 minutes. Season with salt and pepper to taste (I did 1/2 tsp salt + 1/4 tsp black pepper).

2. Then add the diced peppers. Continue to saute until peppers are soft and beef is no longer pink.

3. Then drain any and all excess liquid from the skillet and mix in the pizza sauce.

4. Cut each biscuit into six pieces then place into the greased casserole dish.

5. Add the beef mixture. Then top with the shredded cheese and sliced pepperoni.

6. Bake uncovered for 25-30 minutes, or until biscuits have bubbled up and are cooked through. Cover with foil if needed to prevent the tops from getting too browned.

How To Store

Store leftover any leftover pepperoni pizza biscuit casserole in an airtight container in the fridge for 3-4 days. 

To freeze, once completely cooled, cut into pieces and wrap individually in aluminum foil or plastic wrap and store in an airtight freezer ziploc bag.

Reheat Tips!

My favorite way to reheat this dish is in the air fryer! Reheat in the air fryer for a delicious golden brown, crispy outside and soft and doughy center! Or place in the oven at 375 until heated through.

Can I freeze this pizza casserole with biscuits?

Yes, this casserole is great to freeze! Once completely cooled, cut into pieces and wrap individually in aluminum foil or plastic wrap and store in an airtight freezer ziploc bag. To reheat, let defrost in the refrigerator and reheat in the air fryer. 

Can I make this recipe ahead of time?

This recipe is a perfect to make in advance. Just prepare the casserole up until the baking step, cover and place in the refrigerator. When you’re ready to eat, let dish sit out to come to room temperature then bake in oven as instructed. 

Is this recipe good for meal prep?

Yes, this casserole is a great option for meal prep. To make serving easy, once cooled cut bake into individual servings and place in airtight container or ziploc bags. Then reheat when ready to eat.

Ingredients

  • 1 lb. lean ground beef 96/4

  • 14 oz. jar pizza sauce
  • 1 (16-oz.) can Pillsbury Grands Biscuits
  • 1.5 cups shredded mozzarella cheese
  • 1.5 oz sliced turkey pepperoni

Instructions
