Pizza night just got even easier! This Pizza Casserole with Biscuits is the ultimate, weeknight dinner that's super easy, high protein and kid-approved! It only requires 6 simple ingredients and is a mess-free way to enjoy all your favorite pizza flavors in one easy dish!
Preheat the oven to 375 degrees F. Spray a 9x13-inch baking dish with cooking spray.
Add the ground beef to a large skillet over medium heat and cook, crumbling as you go, for 3-4 minutes. Season with salt and pepper to taste (I added about 1/2 tsp salt and 1/4 tsp of pepper).
Then add the diced peppers. Continue to saute until peppers are soft and beef is no longer pink. Then drain any and all excess liquid from the skillet and mix in the pizza sauce.
Cut each biscuit into six pieces then place into the greased casserole dish. Add the beef mixture.
Then top with the shredded cheese and sliced pepperoni.
Bake uncovered for 25-30 minutes, or until biscuits have bubbled up and are cooked through. Cover with foil if needed to prevent the tops from getting too browned.
Let cool for 5-10 minutes then slice and enjoy!
Notes
To make gluten-free: use a gluten-free baking mix to a quick biscuit dough and form into small balls to place in the greased baking dish. Here is a quick recipe for gluten-free biscuits for the pizza casserole. Additional Notes:
Add more veggies (& fiber!) with mushrooms, cooked broccoli, onions or your favorite vegetable!
Increase protein by adding more ground beef (I have added up to 1.5 lb and this casserole still works great)
Reheat in the air fryer for a delicious golden brown, crispy outside and soft and doughy center!
These are great to freeze! Once completely cooled, cut into pieces and wrap individually in aluminum foil or plastic wrap and store in an airtight freezer ziploc bag.
