About This Recipe

There’s nothing better than a quick and easy Mexican casserole when you want to enjoy all your favorite taco flavors without all the mess! This Doritos pie casserole recipe is one of my favorite quick and easy weeknight meals when I want something hearty, comforting and quick! 

This easy Dorito casserole is made with a hearty ground beef mixture, chunky salsa, sweet corn and topped with creamy cheese and crunchy Doritos! Not a fan of Doritos? No problem, just swap them out for your favorite tortilla chip or skip altogether! 

This recipe is perfect for taco Tuesday and will be loved by the whole family! The best part? It’s made with super simple ingredients and you probably already have several on hand! It’s also super easy to switch up or modify with what you do have. 

Top this hearty casserole with your favorite taco sauce and serve with my favorite Healthy 7 Layer Dip or Cilantro Brown Rice for the ultimate Mexican meal! Or for a lower carb option pair this meal with my Cilantro Lime Cauliflower Rice!

Ingredients and Substitutions

  • Lean ground beef – I used 96/4 
  • Onion 
  • Taco seasoning – can use store-bought or homemade taco seasoning. 
  • Chili Powder
  • Salsa – I used mild chunky salsa but feel free to use any kind to match your spice preference! 
  • Corn
  • Black beans
  • Fresh cilantro
  • Mexican shredded cheese – or your favorite kind of cheese.
  • Doritos – mini Dorito chips or regular Doritos slightly crushed.

Optional Variations and Dietary Adaptations

  • Mix up the meat! Swap the ground beef for ground chicken or ground turkey. 
  • Different flavor Doritos! I used classic nacho cheese Doritos but get creative with the Cool Ranch Doritos, Spicy Sweet Chili or your favorite flavor of Doritos! 
  • Add extra tomatoes! Love tomatoes? Add a can of diced tomatoes or green chiles for extra flavor! 
  • Make it creamy! Add sour cream or greek yogurt to make this casserole extra creamy! 
  • Want lower carb? Skip the corn or black beans! Sub for bell peppers or cauliflower rice for extra volume. 
  • Skip the Doritos! Don’t like Doritos? Simply swap for your favorite tortilla chip or fresh lettuce on top! 

How To Make

The full printable recipe is below, but let me walk you through the process so you know what to expect when you’re making it!

1. Add the ground beef to a large skillet and set to medium heat. After 3-4 minutes add the onion.

2. Cook until the onion is tender and the beef is brown.

3. Drain any excess liquid then stir in the taco seasoning, water, chili powder and salt.

4. To the greased baking dish, add the cooked beef and onions, salsa, corn, black beans, cilantro and 1/2 cup of the shredded cheese.

5. Mix then spread out evenly. Top with remaining 1 cup shredded cheese.

4. Bake uncovered for 10 minutes. Top with Doritos, cilantro, sour cream and whatever else sounds yummy and enjoy! (Doritos added to the casserole dish for photos. Wait until just before serving to add Doritos or they will get soggy!)

FAQ: Doritos Pie Casserole

Can I freeze this casserole?

Yes, you can freeze this Dorito Pie. To freeze, let casserole cool completely to room temperature (wait to add Doritos until ready to serve). Place in freezer-safe airtight container and freeze for up to 3 months. To reheat, let thaw in the refrigerator overnight then reheat in oven for 10-15 minutes until warmed through then topped with crushed Doritos.  

Can I use something besides Doritos for this casserole?

Yes, if you don’t like Doritos you can totally swap for regular tortilla chips or any other crunchy topping for this easy taco casserole recipe. 

What should I serve with this Doritos casserole?

I love serving this casserole with my favorite Cilantro Brown Rice for a classic taco night! Or, add a side of green beans or broccoli for some extra veggies and fiber!

Ingredients

  • 2 lb. lean ground beef I used 96/4
  • 1 small yellow onion (170g) diced
  • 1 packet taco seasoning + water according to packet
  • 1 Tbsp chili powder
  • 1/2 tsp salt
  • 24 oz. jar mild chunky salsa
  • 3/4 cup frozen or canned corn (127g)
  • 1 (15.5-oz.) can black beans, drained and rinsed
  • 2-3 Tbsp fresh cilantro chopped – can omit
  • 1.5 cup Mexican shredded cheese (168g)

To Serve:

  • 4 cups mini Doritos or regular Doritos (200g)* slightly crushed – about a 1/2 cup (25g) per serving

Instructions

  • Preheat the oven to 375 degrees F. Spray a 9×13-inch baking dish with cooking spray.
  • Add the ground beef to a large skillet and set to medium heat. After 3-4 minutes add the onion and cook until the onion is tender and the beef is brown. Drain any excess liquid then stir in the taco seasoning, water, chili powder and salt.
  • To the greased baking dish, add the cooked beef and onions, salsa, corn, black beans, cilantro and 1/2 cup of the shredded cheese. Mix then spread out evenly. Top with remaining 1 cup shredded cheese.
