Take taco night to the next level with this Healthy Doritos Pie Casserole! It's the easiest and tastiest way to enjoy all the beefy, cheesy and crunchy flavors you love about tacos in one simple casserole dish! It's ready in just 30 minutes and guaranteed to be a new family favorite!

Ingredients

  • 2 lb. lean ground beef I used 96/4
  • 1 small yellow onion (170g) diced
  • 1 packet taco seasoning + water according to packet
  • 1 Tbsp chili powder
  • 1/2 tsp salt
  • 24 oz. jar mild chunky salsa
  • 3/4 cup frozen or canned corn (127g)
  • 1 (15.5-oz.) can black beans, drained and rinsed
  • 2-3 Tbsp fresh cilantro chopped - can omit
  • 1.5 cup Mexican shredded cheese (168g)

To Serve:

  • 4 cups mini Doritos or regular Doritos (200g)* slightly crushed - about a 1/2 cup (25g) per serving

Instructions

  • Preheat the oven to 375 degrees F. Spray a 9x13-inch baking dish with cooking spray.
  • Add the ground beef to a large skillet and set to medium heat. After 3-4 minutes add the onion and cook until the onion is tender and the beef is brown. Drain any excess liquid then stir in the taco seasoning, water, chili powder and salt.
  • To the greased baking dish, add the cooked beef and onions, salsa, corn, black beans, cilantro and 1/2 cup of the shredded cheese. Mix then spread out evenly. Top with remaining 1 cup shredded cheese.
  • Bake uncovered for 10 minutes. Top with Doritos, cilantro, sour cream and whatever else sounds yummy and enjoy!

Notes

*Doritos added to the casserole dish for photos. Wait until just before serving to add Doritos or they will get soggy!
