These juicy and tender Sheet Pan Chicken Fajitas are the perfect busy weeknight dinner! They're ready in just 30 minute and are seasoned to perfection using my favorite taco seasoning mix. Perfect for serving in tortillas, over a bed of greens or in a bowl with your favorite toppings!
3medium bell peppers (450g)I used a red, yellow and green
1large red onion (300g)
1Tbspolive oil (15g)
1limejuiced
2(1-oz.)packs taco seasoning
1/4cupfreshly chopped cilantro
Fajita size tortillas for serving
Optional for serving: avocado, lime wedges, sour cream, salsa, etc.
Instructions
Preheat the oven to 400 degrees F.
Dry the chicken, peppers and onions well with a paper towel then cut them all into thin slices. Add them all to a rimmed baking sheet.
Drizzle the olive oil and lime juice over top then toss to combine. Then sprinkle the taco seasoning over top and toss again. Spread the chicken and vegetables out over the baking sheet evenly.
Bake for 18-20 minutes, or until chicken is cooked through. Then broil on high for 3-4 minutes to get everything a little charred.
Sprinkle with the fresh cilantro then serve with warm tortillas and whatever else sounds good and enjoy!
