- Low fat cottage cheese – I love the Good Culture low-fat cottage cheese but you can use any brand or kind you prefer! Full fat, lactose free, reduced-fat, etc.
- Sharp cheddar cheese
- Toast – you can also serve with bagels, english muffins, fresh fruit, etc.
- Add veggies! Throw in your favorite veggies like spinach, kale, bell peppers, mushrooms, etc.
- Mix up the cheese! Sub the sharp cheddar for goat cheese, feta cheese, mozzarella, pepper jack, etc.
- Season it up! Toss in some ranch seasoning, fresh herbs, red pepper flakes, or your favorite seasoning to give your egg recipe a flavorful twist!
- Adjust the amount of protein! Easily add extra eggs, egg whites or amount of cottage cheese to adjust the amount of protein to your needs.
How To Make

1. Spray a skillet with cooking spray (or grease with butter) and set to medium-low heat. Add the eggs and egg whites.
2. Whisk to combine. Season with salt and black pepper to taste.
3. Stir frequently until eggs are cooked, then remove from heat and stir in the cottage cheese and shredded cheese.
4. Mix until cheese is melted. Serve with toast and whatever else sounds good and enjoy!
For The Best Scrambled Eggs
- Use a good quality cottage cheese! Some cottage cheese brands have a higher moisture content than others which can cause your eggs to turn out watery. I love Good Culture but there are lots of great brands out these.
- Cook on medium-low heat! You don’t want to cook your eggs on too high of heat or it will scorch them to the pan.
- Stir frequently! Stirring frequently will help air get into the eggs creating that light and fluffy texture. It will also help prevent them from burning and sticking to the pan.
- Use a nontoxic, non-stick skillet! I love using a nontoxic, nonstick skillet to make sure the egg mixture doesn’t stick to the pan and it helps make clean up a breeze! Again, just be sure to not turn the heat up too high, especially if using a nonstick skillet to prevent burning and sticking.
Why did my eggs turn out watery?
Your scrambled eggs may turn out watery due to the brand of cottage cheese you use. I suggest using a cottage cheese that isn’t very liquidy (my favorite it Good Culture) and be sure to give it a good stir before adding to your eggs.
How do I prevent my eggs from sticking?
Be sure to use a good nontoxic, nonstick pan to prevent your eggs from sticking. You can also spray a regular skillet with cooking spray or grease with butter. Be sure to not turn the heat up too high as this can scorch the eggs and burn them to the pan. I recommend cooking on medium-low heat (especially if using a nonstick skillet). Also, be sure to stir frequently as this will help them not stick as well.
Can I use all whole eggs instead of egg whites?
Yes, if you want to use all whole eggs just substitute the egg whites for 1-2 more whole eggs. You can also use only one whole egg and add 50 grams more egg whites (130g) if you prefer less fat but I would not recommend omitting the whole eggs altogether. This recipe is super customizable so you can adjust the ratio of eggs to egg whites as best fits your nutrition and taste preferences.
