Helpful Tips
Use a good quality cottage cheese! Some cottage cheese brands have a higher moisture content than others which can cause your eggs to turn out watery. I love Good Culture but there are lots of great brands out these.
Cook on medium-low heat! You don't want to cook your eggs on too high of heat or it will scorch them to the pan.
Stir frequently! Stirring frequently will help air get into the eggs creating that light and fluffy texture. It will also help prevent them from burning and sticking to the pan.
Use a nontoxic, non-stick skillet! I love using a nontoxic, nonstick skillet to make sure the egg mixture doesn't stick to the pan and it helps make clean up a breeze! Again, just be sure to not turn the heat up too high, especially if using a nonstick skillet to prevent burning and sticking.
