About This Recipe

These buffalo chicken rollups are so tasty and seriously couldn’t be easier! Just like my Chicken Caesar Pinwheels, I love this easy recipe for a quick lunch or pool snack! These pinwheels are also the perfect party appetizer if you want to take something a little different than your traditional buffalo chicken dip. They’re great because everyone can just grab one pinwheel instead of having to keep dipping into the same bowl!

Plus, you can easily make these buffalo chicken tortilla pinwheels in advance, so they’re even a great option for meal prep or if you have lots of other things to prepare for your next gathering. 

Serve these buffalo chicken pinwheels with a side of my Watermelon Mint Salad or Berry Fruit Salad for the ultimate quick summer lunch!

Ingredients and Substitutions

Ingredients for Buffalo Chicken Pinwheels.
  • Chicken: Any type of cooked chicken works! I love the hand-pulled rotisserie breast chicken from Costco! The Shredded Rotisserie Chicken from Target is yummy too! You can also use my Basic Shredded Chicken or any leftover rotisserie chicken or cooked chicken you have on hand.
  • Light mayo: You can also use Greek yogurt in place of the light mayo if you prefer. 
  • Buffalo sauce: Use your favorite buffalo sauce! I like things on the milder side so I used this mild buffalo sauce, but you can use regular buffalo sauce if you prefer a bit of heat. I also recommend Frank’s Buffalo Wing Sauce! 
  • Onion: Yellow onion or red onion both work! Use your preference. 
  • Parmesan cheese: HIGHLY recommend using freshly grated! You could also use blue cheese crumbles, sharp cheddar cheese, mozzarella cheese, or any cheese you prefer! 
  • Flour tortillas: I used the large flour tortillas from Wegman’s. Use whole wheat tortillas, low-carb tortillas or gluten-free tortillas, or any type of tortilla prefer. Just make sure they are the large burrito size so all your stuff will fit inside!

Optional Variations and Dietary Adaptations

  • Low carb: For a lower-carb option, you can use a low-carb wrap like lavash, flatbreads, Carb Balance low-carb tortillas, etc.
  • Mix-ins: Add in lettuce, tomatoes, green onions, cabbage, carrots, or cucumbers to your buffalo chicken filling for even more volume & flavor! 
  • Dressing: Add even more flavor by drizzling some ranch dressing, blue cheese dressing, or my Avocado Lime Ranch Dressing in your roll up, or you can just dip it on the side.

How To Make

The full printable recipe is below, but let me walk you through the process so you know what to expect when you’re making it!

1. Make sure the chicken is shredded fine (chop to get it even finer), then add to a bowl with the mayo, buffalo sauce, red onion and parmesan.

2. Mix together well. Season with salt and black pepper to taste.

3. Lay tortillas out. Divide the chicken salad in half (about 1 cup each). Spread on even, pressing down with the back of a spoon or your hands to spread across the whole tortilla. **make sure extra isn’t in the center so it rolls up even.**

4. Dampen fingertips with a little water, then tightly roll each tortilla up.

5. Cover the tortilla with a damp paper towel and place in the fridge for at least 15 minutes before cutting.

6. Cut into pinwheels with a serrated knife and enjoy!

How To Store

Cover in an airtight container and keep refrigerated until ready to serve. 

Helpful Tips

  1. Finely chop chicken: Make sure your chicken is shredded very well and chopped into small pieces so that it will spread evenly in your tortilla and also allow the tortilla to roll up smoothly. If you need a tip for shredding the chicken, I like to put it in the bowl of my stand mixer and, using the beater attachment, shred the chicken into tiny pieces. Saves so much time!
  2. Even-sized pinwheels: To get even-sized pinwheels, make sure to spread chicken salad evenly across the whole tortilla and that extra isn’t in the center. Then the tortilla will roll up even, and you’ll be able to cut pinwheels more uniformly in size.
  3. Refrigerate: If time allows, to make cutting easier, cover with a damp paper towel (or plastic wrap) and refrigerate for at least 15 minutes. Use a serrated knife to cut into pinwheels.

Can I prep these pinwheels in advance?

Yes, you can prep these buffalo chicken pinwheels in advance and store in an airtight container or wrapped in plastic wrap in the fridge until ready to serve. 

What’s the best type of chicken to use?

Use any kind of rotisserie chicken, grilled chicken, or even canned chicken (well-drained). Just make sure to finely shred it to ensure even distribution in the buffalo chicken mixture.

Are these buffalo pinwheels spicy?

No, I made these buffalo pinwheels using mild buffalo sauce so they are not spicy. However, you can use regular buffalo sauce if you prefer a bit of heat. I recommend Frank’s Buffalo Sauce, but use any kind of buffalo sauce you prefer!

Ingredients

  • 2 cups shredded chicken (200g)
  • 1/4 cup light mayo (60g)
  • 2 Tbsp buffalo sauce (30g) I used Frank's mild buffalo sauce
  • 1/4 cup finely chopped onion (30g)
  • 2 Tbsp grated parmesan cheese (16g)
  • Salt & cracked black pepper to taste
  • 2 flour tortillas burrito size
