Healthy Pumpkin Recipes to Make This Fall

Tis the season for all things pumpkin! Am I right, am I right?

It’s interesting if you think about it, because really, a GOOD pumpkin recipe has less to do with the pumpkin itself and more to do with the ingredients and spices you pair it with. Canned pumpkin is kind of bitter on its own, but that doesn’t mean you have to add a bunch of sugar and calorie dense ingredients to make it taste good either.

Pumpkin has been one of my favorite ingredients to use in my recipes because it brings about an amazing texture to baked goods! It can be challenging to bake healthy treats that have a great texture and still taste delicious, ones that aren’t dry or bland tasting. It still is important what you pair it with, but if done right, the pumpkin helps bring about a moister, more voluminous treat.

Like I said, I use pumpkin in a lot of my recipes! But today I wanted to highlight some of my favorite Pumpkin-themed ones I have created and enjoyed! In no particular order, so let’s get into it!

1. 50 Calorie Pumpkin Chocolate Chip Cookies

I wanted to mention these first, because I have made these the most out of any other recipe in this post. They are my go-to easy cookie recipe! I lived off these when I was a nurse and on the go all the time because there is no crumbs or mess with them. They are perfect for an afternoon snack or a post-lunch dessert to curve your sweet tooth. And like I said, they are the easiest things ever to make!

2. Pumpkin Oatmeal Bake with Maple Cinnamon Cream Cheese Glaze

These pumpkin oat bars are truly melt-in-your-mouth good. They are everything you love about pumpkin recipes. Perfectly sweet and spiced. Perfect creamy pumpkin oat texture. And the maple cinnamon cream cheese glaze drizzled on top is enough to rock your socks off. Really, you must try it. This is one of those recipes that could pass for breakfast or dessert!

3. Healthy Pumpkin Cookie Dough Dip

Creamy, sweet and perfectly spiced pumpkin chocolate chip cookie dough! Everything about this dip is heavenly. Especially when you use Biscoff cookies for dipping 😉 An indulgent treat that is lower in fat than traditional cookie dough and higher in protein. Bring the dip to a party for snacking or keep it all to yourself! Zero judgement here.

4. Lightened-Up Pumpkin Mousse Pie

This is one of those recipes I whipped up randomly for a Friendsgiving, so I didn’t think to get the grams of each serving. If you are a macro counter looking for exact measurements, just weigh the whole recipe and divide it by eight, or however many slices you cut it in to. The creamy chilled pumpkin mousse paired with cool whip and graham cracker crust is something special though. And this pie is another super easy one to whip up!

5. Pumpkin Pie Donuts with Chocolate Frosting

These are some of my favorite donuts! For just 116 calories per frosted donut, you cannot beat that macro magic! One of Simon’s favorites as well, so you know it tastes like the real deal!

6. The Best Low Fat Pumpkin Muffins

Another super easy go-to! I like to use this recipe as a base and modify adding other fun things as well – like chocolate chips, walnuts, fruit, you name it! It is a great recipe to have in your recipe box though when you just want a simple, good, healthy muffin.

7. Pumpkin Chocolate Chip Blondies

I feel like I say this a lot, but these blondies are some of my favorite. The texture is INCREDIBLE. And there is gooey chocolate throughout. Another one that people will not guess is healthy!

8. Pumpkin Cauliflower Oatmeal

Last but not least, I just had to share my pumpkin oatmeal recipe! The past year or so I have been adding either cauliflower rice or zucchini to my oats whenever I make them – just because I can’t taste it and it adds so much volume. But when I started eating oats for the first time consistently in high school, pumpkin oats were all I ever had! This recipe is the same as that one, just with cauliflower rice (because #volume). I’ll go ahead and tell you, the secret is in the spices and pancake syrup 😉 the oats are so flavorful and cozy though. Once you try, you will never look back!

Again, these were in no particular order! I do love them all and they are all special in there own way. Also, even though these are “pumpkin” flavored, they all still taste great year round! The only one I haven’t made repeatedly is the Pumpkin Mousse Pie, but it is a chilled cool whip based pie, so pretty sure that would be equally amazing in the summer as well 😉
