***Place the Kitchenaid bowl (or whatever mixing bowl you’ll use for whipping the cream) into the freezer 30 minutes before starting to get it nice and chilled.**

1. Add strawberries and sugar to a food processor or blender.

2. Blend into a puree. Reserve 1/2 cup and set aside.

3. Add heavy whipping cream to the chilled mixing bowl.

4. Start on low, gradually increasing to high and beat until stiff peaks form.

5. Add in the remaining strawberry puree.

6. Gently fold until just combined.

7. Take the 1/2 cup reserved puree and divide between four glasses/containers, spreading along the bottom. Top with the strawberry mousse. Place in the fridge to chill for 1-2 hours or longer.

8. Top with sliced strawberries when ready to serve, if desired, and enjoy!
Cover the parfaits tightly with plastic wrap or store them in an airtight container in the fridge. They’ll stay fresh for up to 3 days. The mousse may firm up slightly as it chills, but it will still be light and creamy.

🫧Dry strawberries well: After cleaning, dry strawberries well before adding to the blender (to avoid adding extra water).
🧊Chill your bowl and beaters: For light, fluffy whipped cream, make sure to chill your mixing bowl and beater attachments in the fridge or freezer for 30 minutes before whipping. Cold tools help the cream whip faster and hold its shape.
🍓Strain puree: After blending, you can strain the puree to remove the seeds. This gives the mousse a smooth texture and an even, vibrant color.
🥣Fold gently: When combining the whipped cream with the strawberry mixture, use a gentle folding motion to avoid deflating the mousse. This keeps it airy and light.

Can I freeze this strawberry mousse?
I don’t recommend freezing as it can affect the texture of the whipped cream and make the mousse grainy or watery once thawed.
Can I use frozen strawberries instead of fresh?
Yes, you can use frozen strawberries—just make sure to thaw them completely and drain off any excess liquid before blending. Keep in mind that frozen berries may create a slightly thinner mousse.
How do I keep the whipped cream from deflating?
Make sure the whipped cream is whipped until firm peaks form, and fold it gently into the strawberry mixture using a light hand. Overmixing can deflate the mousse.
What’s the difference between whipping cream and heavy whipping cream?
The main difference is the fat content. Heavy whipping cream holds its shape better once whipped, making it ideal for mousses, piping, and layered desserts. Whipping cream still whips up nicely but creates a lighter, softer texture that may not hold as long. You can use regular whipping cream if needed just note it will be a little bit of a lighter texture!
