This no bake dessert is a light, velvety mousse that is perfectly balanced with the natural tartness of the berries and the rich creaminess of the whipped cream. It’s a dessert that feels both indulgent and refreshing, ideal for those warm days when you crave something sweet yet not overly heavy.

These strawberry parfaits are incredibly beginner-friendly while also offering plenty of room for creative twists. You can get creative with your toppings or layer this mousse with more delicious treats like my healthy brownie batter or healthy Nutella for a chocolate-covered strawberry rendition!

Whether you’re preparing a quick treat on a busy weeknight or looking to impress guests at your next gathering, these parfaits can be made ahead of time and stored in the fridge.

Ingredients and Substitutions

  • Fresh strawberries: Make sure to clean and thoroughly dry the strawberries before adding to the blender. This will help avoid extra water, which will make the mousse too liquidy. 
  • Granulated sugar: Or swap for your favorite granulated sweetener like Swerve, Truvia, or Monk Fruit. 
  • Heavy whipping cream: The heavy whipping cream gives this mousse its light, airy texture. When whipped, the heavy cream transforms into soft peaks that add richness and structure to this strawberry mousse.

Optional Variations and Dietary Adaptations

  • Different fruit: ​Substitute the fresh strawberries for fresh blueberries, blackberries or raspberries.
  • Dairy-free: ​Use dairy-free whipping cream to make this recipe dairy-free/vegan-friendly. 
  • Toppings: Add your favorite toppings like white chocolate chips, granola, more whipped cream, crumbled cookies, chocolate sauce, a sprig of mint, etc.

How To Make

The full printable recipe is below, but let me walk you through the process so you know what to expect when you’re making it!

***Place the Kitchenaid bowl (or whatever mixing bowl you’ll use for whipping the cream) into the freezer 30 minutes before starting to get it nice and chilled.**

1. Add strawberries and sugar to a food processor or blender.

2. Blend into a puree. Reserve 1/2 cup and set aside.

3. Add heavy whipping cream to the chilled mixing bowl.

4. Start on low, gradually increasing to high and beat until stiff peaks form.

5. Add in the remaining strawberry puree.

6. Gently fold until just combined.

7. Take the 1/2 cup reserved puree and divide between four glasses/containers, spreading along the bottom. Top with the strawberry mousse. Place in the fridge to chill for 1-2 hours or longer.

How To Store

Cover the parfaits tightly with plastic wrap or store them in an airtight container in the fridge. They’ll stay fresh for up to 3 days. The mousse may firm up slightly as it chills, but it will still be light and creamy.

Helpful Tips

🫧Dry strawberries well: After cleaning, dry strawberries well before adding to the blender (to avoid adding extra water).

🧊Chill your bowl and beaters: For light, fluffy whipped cream, make sure to chill your mixing bowl and beater attachments in the fridge or freezer for 30 minutes before whipping. Cold tools help the cream whip faster and hold its shape.

🍓Strain puree: After blending, you can strain the puree to remove the seeds. This gives the mousse a smooth texture and an even, vibrant color.

🥣Fold gently: When combining the whipped cream with the strawberry mixture, use a gentle folding motion to avoid deflating the mousse. This keeps it airy and light.

🍫Add a pretty layer: For added contrast, you can layer the mousse with crushed graham crackers, brownie batter (I like to use a pastry bag to layer the two desserts), cookie crumbs, or fresh berry slices for a parfait-style presentation.

❄️Chill before serving: Let the mousse chill for at least 1–2 hours before serving so it sets properly and develops a fuller flavor.

⏱️Make ahead: These parfaits are a great make-ahead dessert! Prepare and assemble them the day before serving to allow the flavors to meld. Just be sure they’re well-covered to prevent the mousse from drying out or absorbing fridge odors.

FAQ: Strawberry Mousse

Can I freeze this strawberry mousse?

I don’t recommend freezing as it can affect the texture of the whipped cream and make the mousse grainy or watery once thawed.

Can I use frozen strawberries instead of fresh?

Yes, you can use frozen strawberries—just make sure to thaw them completely and drain off any excess liquid before blending. Keep in mind that frozen berries may create a slightly thinner mousse.

How do I keep the whipped cream from deflating?

Make sure the whipped cream is whipped until firm peaks form, and fold it gently into the strawberry mixture using a light hand. Overmixing can deflate the mousse.

What’s the difference between whipping cream and heavy whipping cream?

The main difference is the fat content. Heavy whipping cream holds its shape better once whipped, making it ideal for mousses, piping, and layered desserts. Whipping cream still whips up nicely but creates a lighter, softer texture that may not hold as long. You can use regular whipping cream if needed just note it will be a little bit of a lighter texture!
