Ingredients

  • 1.5 cup fresh sliced strawberries* 8 oz.
  • 1/3 cup granulated sugar 64g
  • 1 cup heavy whipping cream 8 oz.

Instructions

  • ***Place the Kitchenaid bowl (or whatever mixing bowl you’ll use for whipping the cream) into the freezer 30 minutes before starting to get it nice and chilled.**
  • Add strawberries and sugar to a food processor or blender.
  • Blend into a puree. Reserve 1/2 cup and set aside.
  • Add heavy whipping cream to the chilled mixing bowl. Start on low, gradually increasing to high and beat until a stiff peak forms.
  • Gently fold in the remaining strawberry puree.
  • Take the 1/2 cup reserved puree and divide between four glasses/containers, spreading along the bottom. Top with the strawberry mousse. Place in the fridge to chill for 1-2 hours or longer.
  • Top with sliced strawberries when ready to serve, if desired, and enjoy!

Notes

*after cleaning, dry strawberries well before adding to the blender (to avoid adding extra water)
