About This Recipe

Everyone needs an easy side dish recipe they can whip up for a quick weeknight meal and this parmesan zucchini is it! I’m telling you… even picky eaters will love this yummy roasted zucchini recipe! 

If you ask me all side dish recipes should be easy! I mean you spend all this time and effort prepping the main dish you don’t want to have to spend another hour making something to go with it. This recipe is perfect because it only requires simple preparation with a few basic steps and is ready in just 30 minutes. You can seriously whip it up while anything else is cooking it’s that easy! 

There are a variety of ways to cook zucchini but is there a better way than with parmesan cheese? I don’t think so! 

If you’re looking for another great side dish, try my parmesan broccoli or air fryer green beans. You could even roast these cauliflower and carrots at the same time as the zucchini!

Ingredients and Substitutions

Ingredients for Roasted zucchini with parmesan.
  • Zucchini: I like to slice my zucchini into spears but you can also cut the zucchini end to end into ½-inch-thick zucchini slices.
  • Parmesan cheese: I HIGHLY recommend using freshly grated parmesan cheese for this recipe! 
  • Olive oil: This helps our parmesan and seasonings stick to the fresh zucchini. You can use regular or extra virgin olive oil. 
  • Seasonings: I used Italian seasoning, salt and garlic powder. Feel free to throw any other seasonings in there that you think would taste good! 

Optional Variations and Dietary Adaptations

  • Yellow squash: You can easily recreate this recipe with yellow squash or eggplant! 
  • Spice mix: Throw some different seasonings in the spice mix the change up the flavor! Toss in some onion powder, red pepper flakes, black pepper, etc.
  • Panko breadcrumbs: Want some extra crunch? Throw some breadcrumbs onto your zucchini fries.
  • Marinara sauce: Dip these parmesan zucchini fries in a side of marinara sauce for extra flavor! 

How To Make

The full printable recipe is below, but let me walk you through the process so you know what to expect when you’re making it!

Ingredients for Roasted zucchini with parmesan.

1. Preheat the oven to 400 degrees F. Line a large rimmed baking sheet with aluminum foil (for easy clean up) and place a wire rack on top. To cut the zucchini, first slice the ends off. Slice in half lengthwise, then cut each half into four spears. For medium to large size zucchini, cut in half horizontally too.

2. Add zucchini spears to a large bowl. Toss with olive oil then toss with the grated parmesan, Italian seasoning, salt and garlic powder.

3. Then transfer to the prepared sheet pan. Add any remaining parmesan mixture on top.

4. Bake for 15 minutes, then turn to broil for about 2-3 minutes or until lightly browned. Sprinkle with extra parmesan to serve if desired and enjoy!

Can I cook this zucchini in the air fryer?

Yes, you can cook this parmesan zucchini in the air fryer. Preheat the air fryer to 375° F. Cook for 6-8 minutes, until the zucchini and parmesan cheese begin to turn golden brown.

Why did my zucchini turn our soggy?

Be sure to arrange your zucchini single layer on your large baking sheet. In order for the zucchini to get golden brown and crispy, the oven heat needs to be able to easily circulate around all the pieces. Having the zucchini pressed against each other will limit the air circulation and can cause soggy zucchini. If you’re baking sheet isn’t large enough, you may need to split the zucchini onto two prepared baking sheets.

Do I need to peel zucchini?

No, you do not need to peel your zucchini! The skin holds a lot of the zucchini’s main nutrients and will become tender and soft when baked.

  • 4 small to medium-sized zucchini (700g)
  • 1/2 cup grated parmesan cheese (56g)
  • 2 Tbsp olive oil (30g)
  • 2 tsp Italian seasoning
