This super simple Roasted Zucchini with Parmesan is guaranteed to be your new favorite healthy side dish. It’s made with just a few simple ingredients and ready in just 30 minutes.

Ingredients

  • 4 small to medium-sized zucchini (700g)
  • 1/2 cup grated parmesan cheese (56g)
  • 2 Tbsp olive oil (30g)
  • 2 tsp Italian seasoning
  • 1/2 tsp each salt & garlic powder

Instructions

  • Preheat the oven to 400 degrees F. Line a large rimmed baking sheet with aluminum foil (for easy clean up) and place a wire rack on top.
  • To cut the zucchini, first slice the ends off. Slice in half lengthwise, then cut each half into four spears. For medium to large size zucchini, cut in half horizontally too.
  • Add zucchini spears to a large bowl. Toss with olive oil then toss with the grated parmesan, italian seasoning, salt and garlic powder. Then transfer to the prepared baking sheet. Add any remaining parmesan mixture on top.
  • Bake for 15 minutes, then turn to broil for about 2-3 minutes or until lightly browned.
  • Sprinkle with extra parmesan to serve if desired and enjoy!
