This easy cottage cheese toast recipe is simple enough for busy mornings but delicious enough to enjoy for lunch or an afternoon snack, too. I love serving it with fresh fruit or my favorite Berry Fruit Salad. Or for more protein, add a side of Crispy Oven Bacon or Homemade Turkey Sausage.

  • Sourdough bread: Or use your favorite bread. Whole wheat, multigrain, seeded bread, or a hearty artisan loaf all work well. I like to use two small slices or one large slice cut in half.
  • Cottage cheese: I like using low-fat cottage cheese, but whole milk cottage cheese works just as well for an even creamier spread. Blending creates a whipped texture, but you can leave it as-is if you prefer.
  • Eggs: Large eggs are ideal. For firmer yolks, cook them for an extra minute or two. You can also use hard-boiled eggs if you have them prepped.
  • Hot honey: Adds the perfect sweet-and-spicy finish. Store-bought works great, or make your own using my super easy homemade recipe.

Optional Variations and Dietary Adaptations

  • 🥚Egg: Feel free to cook your egg however you prefer! You can do a fried egg, poached egg, scrambled egg, etc.
  • 🥑Avocado toast: Add sliced avocado for extra creaminess and healthy fats.
  • Seasoning: Sprinkle with everything bagel seasoning or flaky sea salt for extra flavor.
  • Fresh herbs: Top with fresh herbs like chives, dill, or basil.
  • Savory toppings: Add sliced tomatoes, green onion, cucumber slices, or microgreens for freshness.
  • Gluten-free: Use gluten-free bread if needed.
  • 🍯Honey: Swap the hot honey for regular honey if you prefer less heat.

How To Make

1. Bring a small pot of water to a boil. Gently lower the eggs into the boiling water and cook for 8 minutes for soft, jammy centers. Immediately transfer the eggs to a bowl of ice water.

2. Once cool enough to handle, peel and slice each egg in half. Meanwhile, toast the sourdough until golden and crisp.

3. Blend the cottage cheese until smooth and creamy. You can skip this step and add it directly to the toast, but blending makes it extra creamy and delicious.

4. Divide the cottage cheese evenly between the two slices of toast. Then top each with two egg halves.

5. Drizzle each toast with 1 teaspoon of hot honey.

6. Finish with salt and black pepper and red pepper flakes if desired, then enjoy immediately.

How To Store

This recipe is best enjoyed fresh after assembling.

If you’d like to meal prep:

  • Toast the bread and assemble just before serving so it stays crisp.
  • Cook the eggs up to 4 days in advance and store them peeled or unpeeled in the refrigerator.
  • Blend the cottage cheese ahead of time and refrigerate in an airtight container for up to 3 days.

  • 1 cup cottage cheese (220g)
  • 2 large eggs
  • 2 tsp. hot honey
  • Salt & black pepper
  • Crushed red pepper flakes optional
