  • Yukon gold potatoes: I love the little Yukon gold potatoes because they get crispy on the outside while staying creamy inside. You can also use baby potatoes or red potatoes if needed.
  • Fresh green beans: Trimmed and cut in half. Swap with asparagus, broccoli florets, or Brussels sprouts if that’s what you have on hand.
  • Olive oil: Avocado oil works well too.
  • Seasonings: Italian seasoning, garlic powder, salt, and black pepper
  • Garlic: Fresh minced garlic works best here, but you can also use frozen cubes for convenience.
  • Steak: Sirloin steak is lean, affordable, and perfect for a macro-friendly steak dinner. Strip steak or ribeye can also be used, but will increase fat content.   
  • Garlic Butter (optional): Salted butter, garlic, Italian seasoning, and garlic powder. Totally optional, but highly recommended if you want extra flavor that gives that steakhouse-style finish.
  • Dinner rolls: Optional for serving with (or without) garlic butter

Optional Variations and Dietary Adaptations

  • Dairy-free: Skip the garlic butter or use a dairy-free butter alternative.
  • Low-carb: Swap potatoes for cauliflower florets or extra green beans.
  • Spicy: Add red pepper flakes or a pinch of cayenne to the veggies or steak seasoning.
  • Fresh herbs: Finish with fresh parsley, rosemary, or thyme after cooking.

How To Make

1. Preheat the oven to 375 degrees F. Grease a large baking sheet. Add the potatoes and green beans to the baking sheet. Drizzle with olive oil and season with Italian seasoning, minced garlic, garlic powder, salt, and pepper.

2. Toss until evenly coated, then spread even.

3. Roast for 15 minutes. Remove from the oven and push the vegetables to the sides to make room for the steaks.

4. Turn the oven to broil (high). Season the steaks with salt and pepper on both sides and place them in the center of the baking sheet.

5. Broil, flipping halfway through, until cooked to your liking:
    *Rare: about 3 minutes per side
    *Medium-rare: about 4 minutes per side
    *Medium: about 5 minutes per side
     (Still varies on thickness; steaks will continue to cook slightly as they rest.)

6. Meanwhile, mix together the garlic butter ingredients. Transfer the steaks to a cutting board and loosely tent with foil. Let rest for at least 5 minutes before slicing. Slice thinly against the grain for the most tender bite. Serve steak with the roasted vegetables, plus garlic butter and rolls if desired, and enjoy!

How To Store

Store leftovers in an airtight container in the refrigerator for up to 3–4 days. For best results, store steak and vegetables separately if possible.

To reheat, warm gently in a skillet over medium heat, in the oven at 350°F, or in the air fryer for a few minutes until heated through. Avoid microwaving for too long to prevent the steak from drying out.

Helpful Tips

  • Don’t overcrowd the pan: Make sure you have space for everything to lie in a single layer on the sheet pan. Space helps the vegetables roast instead of steaming. Use two sheet pans if needed.
  • Let it rest: Letting the steak rest before slicing is key for juicy, tender results.
  • Doneness: Like your steak more done? Thinly slice it first, then toss it in the air fryer for 1–2 minutes, or do a quick pan sear or broil until it’s just right for you.

Top sirloin is ideal for this recipe because it’s lean, affordable, and cooks quickly. Strip steak or ribeye will also work, but will be higher in fat.

Can I cook the steak separately?

  • 1 lb. yukon gold potatoes quartered
  • 8 oz. fresh green beans trimmed & cut in half
  • 2 Tbsp. olive oil (30g)
  • 1 tsp. Italian seasoning
  • 2 cloves garlic minced
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1.5 lb. top sirloin steak about 1 inch thick

  • 1 garlic clove minced
  • 1/2 tsp. Italian seasoning
