Comfort food for a healthy breakfast? Yes, I said it! It’s real, and I’m about to share a recipe with you all that you’re going to make again and again—because it’s that good!

My mouth is watering just thinking about this Healthy Sausage Gravy Breakfast Casserole. It smells and tastes like something my grandma would whip up for Sunday breakfast, or something straight off of the Cracker Barrel menu. It’s fluffy, cheesy, savory, and packs a ton of protein!

The star of this dish is the sausage gravy, a true comfort food. It’s warm and hearty and filled with delicious pieces of ground turkey to keep you feeling full and satisfied.

It’s also one of the easiest dishes to throw together. I am talking prepping the dough and turkey sausage gravy, assembling, and having it in and out of the oven in 30 minutes!

Comfort food that is quick, easy to make, only requires 4 ingredients, and one the whole family will love? I told you, you’ll be making this dish again and again!!

Ingredients and Substitutions

  • Crescent rolls – I used Pillsbury.
  • Ground turkey – I used 99% fat free ground turkey to keep this dish lighter. Feel free to use any ground turkey, chicken, or crumbled sausage.
  • Country gravy mix – I used McCormick’s sausage flavored country gravy.
  • Shredded cheese – I used reduced-fat Colby Jack here, but any shredded cheese will be yummy.

Optional Variations and Dietary Adaptations

To make gluten-free: use a gluten-free crescent roll mix and gluten-free gravy mix.

How To Make

  1. Preheat the oven to 350 degrees F. Spray a 9×13” baking dish with nonstick cooking spray. 
  2. For the Egg White Pizza: Open crescent rolls and place along the bottom of the dish. Press down to spread and even out along the bottom and part of the sides of the dish. Try to seal the seams as much as possible.
  3. Shake egg white carton up and pour slowly over the crescent roll dough. Sprinkle with ranch seasoning mix and bake for 18-20 minutes, or until egg whites are cooked throughout. 
  4. For the Turkey: In a large skillet, add the ground turkey. Cook on medium heat until no longer pink, breaking into smaller pieces with a wooden spoon as you go. 
  5. For the Sausage Gravy: Meanwhile, prepare the country gravy according to package directions. I did this in the microwave. 
  6. Assembly: Mix the ground turkey and sausage gravy together, then add evenly on top of the egg white pizza. Sprinkle it with cheese. 
  7. Bake for 5 minutes or until the cheese has melted. Take out, let cool for 5-10 minutes and enjoy!

Best Ways To Reheat!

  1. In the air fryer. I highly recommend this method if you have an air fryer! It gets the pizza crust little crispy on the outside but stays doughy in the middle, with all the same savory and cheesy flavors as before. It is perfection! Just reheat in the air fryer at 350F for 4-6 minutes, or until desired crispness.
  2. In the oven. If you don’t have an air fryer, the oven is your next best bet! You can do it on broil until it starts to get brown (preferred) or just reheat at 400F until desired temperature is reached.
  3. In the microwave. The microwave doesn’t get the pizza as crisp as the later two, but it still reheats well. Microwave for about 30 seconds or until it’s warmed through.

FAQ: Sausage Gravy Breakfast Casserole

Can I use whole eggs for this recipe instead of egg whites?

Sure! To use eggs instead of egg whites, whisk 10 large eggs into a large bowl with the ranch seasoning mix (or the salt, onion powder, garlic powder). Pour over the crescent rolls and follow along according to the rest of the recipe card.

Does this sausage gravy breakfast casserole work for meal prep?

It holds up great in the fridge and reheats wonderfully, so yes, it works amazing for meal prep!

How should I store this breakfast casserole?

Keep stored in the refrigerator for up to 5-6 days.

What should I serve with this sausage gravy egg white pizza?

This casserole is delicious paired with some additional greens, like arugula, or Air Fryer Broccoli. Or you can never go wrong with a side of fruit salad!

Ingredients

  • 20 oz. raw 99% lean ground turkey
  • 1 2.64-oz. packs sausage flavor country gravy mix
  • 1 8-oz. package crescent rolls I used Pillsbury
  • 2 cups egg whites (480g)
  • 1/2 cup shredded cheddar cheese (56g)
  • 1/4 cup mozzarella cheese (28g)
  • 1 Tbsp ranch seasoning mix or 1 tsp of EACH: onion powder, garlic powder, salt and 1/4 tsp pepper

Instructions

Notes

To make gluten-free: use a gluten-free crescent roll mix.
To make dairy-free: use dairy-free cheese.
To Reheat: I highly recommend reheating in the air fryer. The crispy outside and doughy middle is SO GOOD. But the oven and microwave work great for reheating too.
