I love making this hash in the air fryer because it requires minimal cleanup and a fraction of the oil traditional frying requires to get crispy potatoes.

- Sweet potato: you’ll need one large sweet potato or a couple small ones. I love using my food chopping to get even-sized sweet potato cubes
- Onion: you can use red or yellow onion!
- Bell pepper: I like the sweetness of using a red, yellow or orange bell pepper but any color works including green peppers
- Olive oil: or your favorite cooking oil
- Seasonings: salt, smoked paprika, garlic powder, onion powder, and black pepper
- Cooked bacon: use my oven baked bacon recipe for the easiest most delicious crispy bacon! You can also use turkey bacon if you prefer.
- For serving: serve with your condiments of choice like ketchup, mayo, mustard, hot sauce, etc. and cooked eggs (or any breakfast protein of choice)
- More veggies: throw in additional greens like spinach or kale! Mushrooms would also be a delicious addition.
- Meat: swap the bacon for sausage or turkey sausage! You could also throw some cooked chicken in there for speedy lunch or dinner option.
- Cheese: sprinkle some feta or goat cheese on top!
- Avocado: serve with avocado for additional healthy fat
How To Make
The full printable recipe is below, but let me walk you through the process so you know what to expect when you’re making it!

1. Preheat the air fryer to 400 degrees F. Dice sweet potatoes into small cubes, about 1/2-inch in size (I used the large blade on my vegetable chopper). Finely dice the bell pepper and onion, about 1/4 to 1/2-inch (I used the small blade on my vegetable chopper).

2. Add the sweet potato chunks and diced vegetables to a large bowl with the olive oil, salt, smoked paprika, garlic powder and onion powder and black pepper. Toss to evenly coat.

3. Place mixture in air fryer basket and spread out into a single layer (cook in batches if needed so it crisps up). Cook for 20-25 minutes, or until tender and roasted to liking. Shake halfway through and spray with a little extra oil spray. *Note: cooking time will depend on your individual air fryer size.

4. Add the bacon crumbles and toss everything together. Serve with eggs or cottage cheese to up the protein or enjoy as is. Add condiments of choice and enjoy!
Store leftover sweet potato recipe in an airtight container in the fridge. Reheat in the air fryer (my preferred method) to help re-crisp the potatoes but you can also reheat in the microwave or on the stovetop in a small frying pan.

Do I need to soak the sweet potatoes before air frying?
I personally don’t think you need to soak the sweet potatoes before air frying. If I’m making homemade french fries I like to soak russet potatoes to remove excess starch. However, I’ve found it’s not necessary for sweet potatoes. Of course, you can soak them if you prefer for 15-20 mins before air frying.
Can I use regular potatoes for this recipe?
Yes, you can use white potatoes for this recipe. I love air frying Yukon gold potatoes like in my healthy breakfast bowls recipe!
Why did my hash turn out soggy?
If your sweet potatoes and veggies overlap or are overcrowded, they may turn out soggy. Make sure you spread out your potatoes, onions and bell peppers in an even layer on your air-fryer basket. If your air fryer is overcrowded, it will steam and cause everything to be soggy.

Air Fryer Sweet Potato Hash
Ingredients
- 1 large sweet potato (325g) diced 1/2-inch cubes, ~3 cups
- 1 small onion (150g) diced, ~1 cup
- 1 bell pepper (150g) diced, ~1 cup
- 1.5 Tbsp olive oil (22g)
- 1 tsp each: salt, smoked paprika, garlic powder, onion powder
- black pepper to taste
- 3 pieces cooked bacon (22g) crumbled
Optional for serving:
- Condiments of choice: ketchup, mayo, mustard, hot sauce, etc.
- Cooked eggs

Instructions
