This Air Fryer Sweet Potato Hash combines the natural sweetness of roasted sweet potatoes with savory bites of bell peppers, onions, and bold spice! Plus, you get 5 grams of fiber per serving!

Ingredients

  • 1 large sweet potato (325g) diced 1/2-inch cubes, ~3 cups
  • 1 small onion (150g) diced, ~1 cup
  • 1 bell pepper (150g) diced, ~1 cup
  • 1.5 Tbsp olive oil (22g)
  • 1 tsp each: salt, smoked paprika, garlic powder, onion powder
  • black pepper to taste
  • 3 pieces cooked bacon (22g) crumbled

Optional for serving:

  • Condiments of choice: ketchup, mayo, mustard, hot sauce, etc.
  • Cooked eggs

Instructions

  • Preheat the air fryer to 400 degrees F.
  • Dice sweet potatoes into small cubes, about 1/2-inch in size (I used the large blade on my vegetable chopper). Finely dice the bell pepper and onion, about 1/4 to 1/2-inch (I used the small blade on my vegetable chopper).
  • Add the diced vegetables to a large bowl with the olive oil, salt, smoked paprika, garlic powder and onion powder and black pepper. Toss to evenly coat.
  • Transfer to the air fryer basket and spread out into a single layer (cook in batches if needed so it crisps up). Cook for 20-25 minutes, or until tender and roasted to liking. Shake halfway through and spray with a little oil spray.
  • Add the bacon crumbles and toss everything together.
  • Serve with eggs or cottage cheese to up the protein or enjoy as is. Add condiments of choice and enjoy!

Notes

Store leftover sweet potato recipe in an airtight container in the fridge.
Reheat in the air fryer (my preferred method) to help re-crisp the potatoes but you can also reheat in the microwave or on the stovetop in a small frying pan.
