About This Recipe

Want to make your own delicious pumpkin drinks right at home? You have to try this super easy, homemade Pumpkin Simple Syrup. It’s perfect to stir it into coffee, lattes, cocktails, tea, or you can even drizzle it over pancakes, oatmeal, or ice cream. It only takes a few minutes to make, and you’ll find so many ways to use it.

Unlike many pumpkin syrups that rely on artificial flavoring or syrupy concentrates, this one gets its flavor (and beautiful color) from real pumpkin, making it naturally creamy and rich without being heavy.

Quickly whip up a batch for Fall drinks like my Smashing Pumpkin Cocktail! Or, use this syrup to make a yummy Fall-inspired Pumpkin Espresso.

Why You’ll Love This Homemade Pumpkin Syrup

  • Made with real pumpkin: No artificial flavors, no store-bought syrup, and no weird aftertaste. Just real pumpkin purée and warm cinnamon.
  • Quick & easy: Comes together in about 10 minutes with basic pantry ingredients.
  • Perfect for drinks AND desserts: Add it to coffee, cocktails, tea, smoothies, oatmeal, yogurt bowls, or drizzle it over pancakes and ice cream.
  • Easily customizable: Want it sweeter? Spicier? Smoother? You can easily adjust the recipe to your preference.
  • Make-ahead: This pumpkin simple syrup stores well in the fridge all week, so you can have fall-flavored drinks on demand.

Ingredients and Substitutions

Ingredients for Pumpkin Simple Syrup.
  • Pumpkin puree: Make sure to use pure pumpkin puree (not pumpkin pie mix!). My favorite brand of pumpkin is Libby. I think it has the best texture and color but any pure pumpkin works! It also has less moisture than a lot of other brands, which could make your syrup too watery.
  • Granulated sugar: Use regular granulated sugar or your favorite granulated sweetener (like Swerve).
  • Cinnamon: A dash of cinnamon gives this syrup the perfect amount of warmth to balance it out!
