Healthy Coffee Cake in a Mug

Healthy Coffee Cake in a Mug

This Healthy Coffee Cake in a Mug is warm, sugary, light, and it smells like it’s fresh from the bakery. The best part? It only takes 1 minute to make! Enjoy this delicious coffee cake in a mug without worrying about all the carbs and fats of a traditional coffee cake. It’s such a special treat!

Coffee cake holds a lot of nostalgia for me. Growing up, my mom made it for breakfast on every major holiday. No matter if it was Easter, Thanksgiving, or Christmas, we were guaranteed to wake up to the smell of it coming out of the oven. It became such a special tradition in my family. We didn’t really eat coffee cake much outside of those occasions, so it was always a real treat when we did!

I don’t know if it was the madness of 2020 and not having normal family gatherings, but I woke up a couple of days after Easter and had an INSANE coffee cake craving. It was like my body was telling me, “ITS BEEN TOO LONG!!”

Making a whole coffee cake is a lot of work, so I decided I’d experiment with a coffee cake mug cake.

This Healthy Coffee Cake in a Mug takes only 1 MINUTE to make, and all you have to do is mix up some ingredients you likely already have and pop it in the microwave. It’s warm, cinnamony, sugary, and smells like it’s fresh from the bakery! And you get alllllll that minus the carbs and fat of a traditional coffee cake.

I’m so excited for you to enjoy this Healthy Coffee Cake in a Mug and see what you pair it with!

FREQUENTLY ASKED QUESTIONS

Can I use a sugar replacement (like Splenda, Truvia, stevia, etc.) instead of sugar?

You can if cutting carbs and/or sugar is your priority. But do note that artificial sweeteners respond differently when heated and will result in a more pancake-like consistency versus a cake-like consistency.

Can I use another brand of pancake mix?

By all means, yes! I have tried Kodiak Cake, Bisquick, and Krusteaz and all they all are fantastic. Some pancake mixes may respond differently depending on what is added to them, but as a general rule of thumb, most would work as a great sub.

Is this Coffee Cake in a Mug gluten free?

To make this Coffee Cake mug cake gluten free, simply use gluten-free pancake mix.

Can this Coffee Cake in a Mug be made in advance?

Mug cakes should always be made fresh! If you want, you could always prep and measure out the dry ingredients into a couple of Ziplock bags to make the process a little quicker. But either way, this mug cake is super quick and easy to make!

  1. Holy amazingness!!! Super fast and I conveniently had everything in my pantry ready to go! So impressed my little guy had to have his own as well!

  2. Loved this cake. I’m in a cut, so I used swerve sugar and brown sugar and it was still delicious!! I also used a tip from Lauren to make “icing” with my protein powder. I used 20g pescience cake pop and 1oz fairlife milk and mixed for my icing. Such a great dessert! I love the individual desserts Lauren shares bc I have a major sweet tooth and it’s hard for me to stop and just one cookie. These mug cakes are perfect for me.

  3. AMAZING…must try!!🤩
This is by far my favorite recipe of yours right now! So, so good!! Doesn’t even taste like a “healthy food”!! It made me feel like I was cheating big time, while it actually fit perfectly into my daily macros!! The crunch of the brown sugar was my favorite part!! Totally recommend this recipe along with every other recipe from Lauren Fit Foodie that I’ve tried!! 10 stars for this one!!🤩🤩🤩🤩🤩

  4. Super easy to throw together! I used truvia brown sugar and sugar blend. Nothing stuck to the mug and it was single serving so I couldn’t go back for a second helping like I normally would!

  5. I’m so scared with how good this is!!! Made this and added chocolate syrup, absolutely delicious 😋

  6. This is my favorite sweet snack!! If I try to ‘make and bake’, half the batter disappears. Thanks for sharing!

  7. I LOVE all of Lauren’s recipes, but this one may just be my favorite!!! I am in a cut so I used swerve granulated & brown sugar. I’m also gluten free, so I used GF kodiak pancake mix. I love that I get to enjoy a sweet treat that is low cal & has protein! You nailed it Lauren!!!

    • Oh babe this is like having a pancake and mug cake and breakfast and dessert and snack and all of it in one! And so much easier than making any of those individually. Swapped out the sweetener for some protein powder instead (had to add a splash of extra milk too) and used Swerve brown on top. Magical!
