I love eating a huge serving of this Greek salad for lunch with Greek Chicken Bites, Balsamic Grilled Chicken or some easy Salmon Bites. It is hits the spot every time!
This salad would also be the perfect side dish to bring to your next cookout, dinner, or get together. I have found that Greek salad is one of people’s favorites!
It holds up well in the fridge for a few days when you wait to put the dressing on, so it’s also great to prep in advance for easy lunches all week.

- 1 cup red onions or pickled red onions (100g) thinly sliced
- 1 medium cucumber (180g) quartered
