Crisp lettuce and cucumbers, sweet juicy tomatoes, crunchy red onions, olives, feta cheese, and the most delicious, tangy dressing, this light Greek salad is the perfect meal on a hot summer day! Ready in under 5 minutes and less than 50 calories , this salad makes the perfect side dish for you or a crowd, or add your favorite protein for a delicious and light meal!

Ingredients

  • 6 cups romaine chopped (270g)
  • 1 cup cherry tomatoes 149g
  • 1 cup red onions or pickled red onions thinly sliced (100g)
  • 1 medium cucumber quartered (180g)
  • 1 medium bell pepper diced (150g)
  • 1/4 cup Kalamata olives halved (45g)
  • 1/2 cup fat free feta 56g

Instructions

  • Add all the ingredients to a bowl and toss to combine.
  • Add Light Greek Dressing (or your favorite salad dressing) when ready to serve.

Notes

If serving immediately for a crowd, toss with salad dressing. If planning to eat the salad the next few days or to make it last longer, store dressing separately and add when ready to eat.
I suggest my Light Greek Salad dressing but any dressing of your choice will work!
