This Easy Greek Salad is the perfect meal on a hot summer day! Ready in under 5 minutes and less than 50 calories, this salad makes the perfect side dish for you or a crowd. Easily add your favorite protein for a delicious and light meal!

Ingredients

  • 6 cups romaine (270g) chopped
  • 1 cup cherry tomatoes (149g)
  • 1 cup red onions or pickled red onions (100g) thinly sliced
  • 1 medium cucumber (180g) quartered
  • 1 medium bell pepper (150g) diced
  • 1/4 cup Kalamata olives (45g) halved
  • 1/2 cup fat free feta (56g)

Instructions

  • Add all the ingredients to a bowl and toss to combine.
  • Add Light Greek Dressing (or your favorite salad dressing) when ready to serve.

Notes

If serving immediately for a crowd, toss with salad dressing. If planning to eat the salad the next few days or to make it last longer, store dressing separately and add when ready to eat.
I suggest my Light Greek Salad dressing but any dressing of your choice will work!
