Are you team sweet or savory for breakfast? I honestly love both and if you love a big breakfast, this southern style turkey sausage gravy is for you! It taste just like the classic southern breakfast but is made with a lean turkey sausage to help lightened it up a bit! This thick gravy delivers the same velvety smooth texture and rich flavor you know and love but without the extra fat.

This turkey sausage gravy is not only delicious, but super simple to make! It is made with only 4 ingredients and can easily be made in advance if you don’t want to worry about having to put it together in the morning. You can also freeze this gravy recipe is you want to be prepared for your next special occasion or weekend brunch! 

What should you serve with this gravy? The options are endless! I highly recommend serving with my homemade biscuits recipe, toast, English muffins, crispy hash browns, or even scrambled eggs. You can also serve with mashed potatoes or rice for a quick and easy dinner recipe!

Ingredients and Substitutions

Ingredients for Homemade Turkey Sausage Gravy.
  • Turkey breakfast sausage: You’ll need 1lb of turkey breakfast sausage (the kind you normally buy in a plastic tube). Using turkey sausage helps keep this gravy a little lighter however feel free to use regular pork sausage if you prefer. 
  • Flour: The all purpose flour helps thicken the gravy, creating a smooth and creamy consistency that coats everything beautifully. Use gluten-free flour if needed.
  • Dried sage: The dried sage gives the gravy that comforting, classic taste. Feel free to use any herbs you prefer.
  • Whole Milk: I used regular milk to make this gravy as rich and creamy as possible. You can use reduced fat or skim milk just note your turkey gravy might not be as thick. Use a high protein milk like Fairlife for extra protein or dairy-free milk if needed. 

Optional Variations and Dietary Adaptations

  • ​Ground turkey: For an even lighter option, sub the turkey sauce for lean ground turkey.
  • Regular sausage: Easily sub for traditional pork breakfast sausage if you prefer.​
  • Spice: Add a dash of red pepper flakes or cayenne pepper if you like things spicy.
  • Extra flavor: Add sprinkle of garlic powder, onion powder or smoked paprika for extra flavor. You can also add splash of hot sauce or Worcestershire sauce. 

How To Make

The full printable recipe is below, but let me walk you through the process so you know what to expect when you’re making it!

1. Place sausage in a greased large skillet and cook over medium heat, breaking into crumbles with a meat masher, until fully cooked.

2. Sprinkle the flour and sage over top. Stir until all the meat is coated and you see no flour. Cook for 1-2 more minutes.

3. Gradually add one cup of milk while mixing everything thoroughly, then incorporate the second cup of milk. Allow the mixture to come to a gentle simmer.

4. Season generously with salt and fresh ground black pepper. Continue to stir frequently until thickened, then remove from heat. Serve sausage gravy hot with warm biscuits, hash browns, whatever sounds good and enjoy!

How To Store

Store leftover gravy in an airtight container in the fridge for 3-4 days. Reheat gravy in a small saucepan on the stove over medium-low heat. They gravy will thicken as it sits in the fridge so I like to add a little milk when reheating to get the right consistency. 

You can also freeze this gravy. To freeze, let cool completely then store in a freezer-safe container and freeze for up to 3 months. Let gravy thaw overnight in the fridge then reheat.

Helpful Tips

  1. Avoid lumps: Make sure to pour the milk in slowly, whisking constantly, to prevent lumps.
  2. Right consistency: If the gravy is too thick, you can thin it out with a little extra milk until you reach the desired consistency. Alternatively, if your gravy is too thin, you can sprinkle a little bit of flour to and continue to let it simmer to help thicken it back up.
  3. Cook flour: Be sure to completely stir the flour into the sausage and cook for 1-2 minutes before adding the milk to avoid a raw flour taste.
  4. Prep in advance: ​This turkey sausage gravy can easily be prepped in advance if you want to skip an extra step in the morning. Just gently reheat on the stove when ready to eat! You may need to add a little extra milk (or liquid) to help get the right consistency when reheating.

Why do I do if my gravy too thick?

If your gravy is too thick, you can add a splash more of milk while stirring until you reach the desired consistency.

Can I make turkey sausage gravy ahead of time?

Yes you can make this gravy ahead of time if you want to save time in the morning. Prepare gravy as directed then store it in an airtight container in the fridge for up to 3 days. Reheat gently on the stove, adding a splash of milk if it has thickened too much.

What can I serve turkey sausage gravy with besides biscuits?
