I LOVE homemade pancakes but don’t always love the process! Skip the extra work and make a big batch of these mini pancake bites in just 20 minutes.
This easy pancake bites recipe makes the best little breakfast on-the-go or afternoon snack. Easy golden brown bite is fluffy and packed with melty chocolate chips! They’re perfect for the whole family to enjoy!
These pancake bites are so easy to make using my favorite protein pancake mix and mini chocolate chips. Just mix everything up, pour into the muffin pan and enjoy!
And get creative if you want! I love adding the mini chocolate chips to this recipe but some of my other favorite mix-ins are fresh blueberries, raspberries, bacon crumbles, sausage crumbles, cinnamon sugar and more! These will be a go-to during school time!

- Pancake mix – I used Kodiak buttermilk protein pancake mix. Any type of pancake mix works!
- Baking powder – makes these pancake bites even fluffier but not mandatory
- Egg – helps give rise and structure to these pancake bites but also not mandatory!
- Water – you can also use any type of milk, dairy or non-dairy. Use dairy milk to up the protein!
- Chocolate chips – mini chocolate chips preferably if using a mini muffin pan
- Pancake syrup – or pure maple syrup, for serving of course!
- Fruity pancakes! Sub the chocolate chips for blueberries or raspberries for a fruity variations. You could also make a savory version by adding chopped bacon or sausage crumbles!
- Chocolate protein bites! Use a chocolate pancake and waffle mix for a double dose of chocolately goodness!
- Giant pancake bites! It you want larger pancake “muffins”, use a regular muffin pan or bake in an 8×8 and cut into bars!
- Make gluten-free! Use a gluten-free pancake mix to easily make these bites gluten-free!
How To Make
The full printable recipe is below, but let me walk you through the process so you know what to expect when you’re making it!
1. Preheat the oven to 350 degrees F. Add the pancake mix, baking powder, water and the egg to a bowl.
2. Mix until well combined.
3. Fold in half of the chocolate chips.
4. Spray 24 mini muffin cavities with nonstick spray and add the pancake batter about 3/4 full.
5. Top with the remaining chocolate chips. Bake for about 8-10 minutes or until baked through.
6. Let cool then serve with pancake syrup and enjoy!
How To Reheat
- Microwave – pop a few pancake bites in the microwave for 7-10 seconds on 70% power. I like wrapping them in a slightly damp paper towel to make sure they don’t dry out. Don’t overheat or bites will become tough
- Oven – place mini pancake bites in the over at 350F for about 5 minutes or until heated through (this works great if you’re trying to reheat a large batch at one time)
- Air fryer – you can also pop these pancake bites in the air fryer at 350F for 2-3 minutes, or until heated through
What can I use if I don’t have a mini muffin pan?
You can also use a regular muffin pan or an 8×8 baking dish to bake these pancakes. Still bake at 350F but for a little longer, about 15-20 minutes, or until baked through.
Can I make these with homemade pancake mix?
For sure. I love the ease and convenience of using Kodiak cakes (or other pre-made mixes) but you can certainly use your favorite homemade recipe and bake them in the mini muffin pan!
Can you freeze pancake bites?
Yes these pancake bites are one of my favorite easy breakfasts to freeze! Let pancake bites cool completely then place in a large freezer bag, remove all the air and freeze. To reheat, thaw and reheat in the microwave, oven or air fryer (see reheat instructions above).

Mini Chocolate Chip Pancake Bites
Ingredients
- 2 cups pancake mix (252g) any kind, I used Kodiak buttermilk
- 1/2 tsp baking powder
- 1.25 cups water (300g) or milk
- 1 large egg can omit
- 1/2 cup mini chocolate chips
- Pancake syrup for serving
