These pancake bites are so easy to make using my favorite protein pancake mix and mini chocolate chips. Just mix everything up, pour into the muffin pan and enjoy!
This easy pancake bites recipe truly makes the best little breakfast on-the-go or afternoon snack! Easy golden brown bite is fluffy and packed with melty chocolate chips! These bites are the perfect sweet treat in the mornings paired with some bacon, eggs or fresh fruit! They’re perfect for the whole family to enjoy!
And get creative if you want! I love adding the mini chocolate chips to this recipes but some of my other favorite mix-ins include fresh blueberries, raspberries, bacon crumbles, sausage crumbles, cinnamon sugar and more! These will be a go-to during school time!
These pancake bites have all the convenience of a muffin but taste of a regular pancakes! One of my new favorite breakfast recipes that I know you’ll love too! They’re just as easy to grab as a granola bar but taste like fluffy pancakes! If I’m enjoying these at home I love to drizzle them with a little bit of warm syrup!

- Pancake mix – I used Kodiak buttermilk protein pancake mix. Any type of pancake mix works!
- Baking powder
- Water – you can also use any type of milk!
- Egg
- Chocolate chips – Enjoy Life are always my go-to chips! They’re dairy-free, vegan-friendly and great for all types of recipes!
- Pancake syrup – or pure maple syrup
To make gluten-free: use a gluten-free pancake mix
To make dairy-free: use dairy-free chocolate chips (I love Enjoy Life!)
Ways To Switch It Up:
- Fruity pancakes! Sub the chocolate chips for blueberries or raspberries for a fruity variations. You could also make a savory version by adding chopped bacon or sausage crumbles!
- Chocolate protein bites! Use a chocolate pancake and waffle mix for a double dose of chocolately goodness!
- Giant pancake bites! It you want larger pancake “muffins”, use a regular muffin pan or bake in an 8×8 and cut into bars!

For optimal freshness, store mini pancakes in an airtight container in the fridge for 3-4 days.

Helpful Tips
- Use a cookie scoop! If you can’t pour the pancake batter into the greased muffin tins, I love using a cooking scoop!
- How to reheat! there are several ways to reheat these mini pancake bites:
- Microwave – pop a few mini pancake bites in the microwave for 7-10 seconds on 70% power. I like wrapping them in a slightly damp paper towel to make sure they don’t dry out. Don’t overheat or bites will become tough
- Oven – place mini pancake bites in the over at 350F for about 5 minutes or until heated through (this works great if you’re trying to reheat a large batch at one time)
- Air fryer – you can also pop these pancake bites in the air fryer at 350F for 2-3 minutes, or until heated through

What can I use if I don’t have a mini muffin pan?
You can also use a regular muffin pan or 8×8 baking dish.

Of course! I love the ease and convenience of using Kodiak cakes (or other pre-made mixes) but you can certainly use your favorite homemade recipe and bake them in the mini muffin pan!
How do I freeze these pancake bites?
Let pancake bites cool completely. Place the mini pancake bites in a freezer bag or airtight container and freeze. To reheat, thaw and reheat in the microwave, oven or air fryer.

Mini Chocolate Chip Pancake Bites
Ingredients
- 2 cups pancake mix I used Kodiak buttermilk protein pancake mix
- 1 tsp baking powder
- 1.25 cups water or milk
- 1 large egg
- 1/2 cup mini chocolate chips (60g) I used Enjoy Life
- Pancake syrup for serving

Instructions
- Preheat the oven to 350 degrees F.
- Add the pancake mix, baking powder, water and the egg to a bowl and mix until well combined.
- Fold in half of the chocolate chips.
- Spray 24 mini muffin cavities and add the pancake batter about 3/4 full.
- Top with the remaining chocolate chips. Bake for about 8-10 minutes or until baked through.
- Let cool then serve with pancake syrup and enjoy!
