These Mini Chocolate Chip Pancake Bites seriously couldn't be easier! They're made with five simple ingredients and are ready in just 20 minutes! Leave all the hassle of homemade pancakes behind and enjoy these easy, bite-sized pancake bites on busy mornings or as an afternoon school snack!

Ingredients

  • 2 cups pancake mix (252g) any kind, I used Kodiak buttermilk
  • 1/2 tsp baking powder
  • 1.25 cups water (300g) or milk
  • 1 large egg can omit
  • 1/2 cup mini chocolate chips
  • Pancake syrup for serving

Instructions

  • Preheat the oven to 350℉.
  • Add the pancake mix, baking powder, water and egg to a bowl and mix to combine.
  • Fold in half of the chocolate.
  • Spray 24 mini muffin cavities and add the pancake batter about 3/4 full.
  • Top with the remaining chocolate chips. Bake for 8-10 minutes or until baked through.
  • Let cool then serve with pancake syrup and enjoy!

Notes

To make gluten-free: use a gluten-free pancake mix
You can also use a regular muffin pan or 8x8 baking dish if you don't have a 24-count mini muffin pan. If using one of these, still bake at 350F but for about 15-20 minutes, or until baked through.
