You all loved my 5-Minute Pancake Bowl so much the other week I knew I had to come up with more flavors! And what’s better than another easy pancake bowl that taste like a warm, gooey cinnamon roll? This bowl is seriously like having dessert for breakfast, but in the coziest way possible (and with 10 grams of protein!).
Perfect for busy mornings when you want something that taste indulgent but doesn’t require a lot of time or effort. And these bowl is delicious enough to can even enjoy it as a dessert to satisfy all your sweet cravings while still hitting your goals!

- Pancake mix: You can use any pancake mix you like! I used Kodiak Buttermilk protein pancake mix because I love the way it taste (plus it’s higher in protein and fiber than traditional mix). Use a gluten-free pancake mix if needed.
- Baking powder: A little bit of baking powder helps make these pancake bowls nice and fluffy! I recommend using fresh baking powder (opened within the last 3 months). You can also omit the baking powder if you don’t have any.
- Cinnamon sugar: Mix granulated sugar (or your favorite granulated sweetened) with a little bit of cinnamon for this easy homemade cinnamon swirl.
- Glaze: You’ll mix unsalted butter, powdered sugar and milk to make the powdered sugar glaze.
- Gluten-free: Use a gluten-free pancake mix.
- Protein powder: Add a scoop of your favorite protein powder or collagen for extra protein. Just note you may need to add additional water (or milk) to get the right consistency.
- Greek yogurt: Serve with a scoop of greek yogurt for additional protein!
- Maple syrup: If you don’t want to add another step of making the glaze, you can drizzle this cinnamon pancake bowl with maple syrup or your favorite sweetener.

How To Make
The full printable recipe is below, but let me walk you through the process so you know what to expect when you’re making it!

1. Whisk the cinnamon and sugar in a small bowl and set aside.

2. Add the pancake mix and baking powder to a microwave safe bowl and whisk together. Pour in the water and mix until combined.

3. Sprinkle cinnamon sugar over top, then make cinnamon swirls by swirling a toothpick or butter knife a few times in the pancake batter.

4. Microwave for one minute.

5. Melt the butter in a small microwave safe bowl. Whisk in the powdered sugar and milk (add slowly) until combined and desired consistency.

6. Allow 1-2 minutes for the pancake to cool then drizzle glaze overtop and enjoy!
I prefer to eat these pancake bowls fresh but if you are making these pancake bowls for meal prep, you can store in an airtight container in the fridge for 3-4 days. Then just reheat for a few seconds in the microwave. Just be careful to avoid overheating or your pancake bowl will be tough.
Another great option for meal prep is to go ahead and mix all your dry ingredients (pancake mix and baking powder) in the microwave-safe bowl or container. You can also mix up the cinnamon sugar mixture. Then all you have to do is add water, add your cinnamon mixture and microwave for 1 minute and 30 seconds in the morning.
Helpful Tips
- Cooking spray: If you’re worried about your pancake sticking to the bowl, you can mix all you ingredients together then transfer it to a separate bowl sprayed with cooking spray.
- Drizzle glaze: For this recipe, I normally just use a fork or spoon to drizzle the glaze overtop of the pancake bowl but if you want to get fancy you can transfer the glaze to a ziploc bag and cut the corner off to create an at-home piping bag. Then drizzle your glaze overtop of your bowl in any swirl or design you would like.
- Don’t overcook: Make sure not to overcook your pancake bowl. You want to microwave it until it is just set. You can even still have a few little wet spots as the pancake will continue to cook in the hot bowl once you take it out of the microwave.

What type of pancake mix works best for these bowls?
You can use any type of pancake mix you like for these pancake bowls. I like using Kodiak Buttermilk pancake mix since it’s higher in protein. You can use regular pancake mix, whole wheat pancake mix, gluten-free pancake mix, keto pancake mix, etc.
How do I prevent my pancake bowl from overflowing?
Make sure your bowl is large enough to allow room for the batter to rise during cooking. Your mix should only fill the bowl halfway or less.
Why did my pancake bowl turn out tough?
Make sure not to overcook your pancake bowl. You want to microwave it until it is just set. You can even still have a few little wet spots as the pancake will continue to cook in the hot bowl once you take it out of the microwave.

- 1/3 cup buttermilk pancake mix (42g) any pancake mix works, I used Kodiak
- 1/2 tsp baking powder
- 1/3 cup water (80g)
Cinnamon sugar:
- 1 tsp granulated sugar (4g)
- 1/2 tsp cinnamon
Glaze:
- 1 tsp unsalted butter
- 4 tsp powdered sugar (10g)
- 1/2 tsp milk
