About This Recipe

These no-bake cheesecake bars are delicious and so easy to make. Zero oven required! Which is awesome am I right!? Who else loves a good no-bake recipe? Just assemble and let the fridge/freezer/time passed do the work!

I love everything about each layer too. They ALL compliment each other so well. I thought about using something different for the crust, but holy moly, these oats ‘n honey granola bars make it. And no, I am not sponsored by Nature Valley lol.

They really do pair so amazingly with the creamy and sweet cheesecake layer! And everything just tastes more amazing with sprinkles. Do not argue with me on this one 😂

Ingredients and Substitutions

  • Nature Valley Honey Oats ‘n Honey Bars – these bring an amazing sweet crunch!
  • Butter
  • Greek yogurt – I used plain nonfat Greek yogurt for these bars.
  • Fat-free cream cheese – you could also use 1/3 reduced fat or Greek cream cheese.
  • Cool whip
  • Sweetener – you can use whatever you want here! I used Stevia Granulated for Baking.
  • Sprinkles – HOLIDAY STYLE OF COURSE!

How to Make

  1. In a large bowl, stir together crushed granola bars, melted butter and sweetener until well mixed. Press the mixture into a 9×9-inch baking pan that has been generously sprayed with nonstick baking spray.
  2. In a mixer, beat together the cream cheese, yogurt, sweetener, and vanilla. Add cool whip at the end and beat just enough to combine.
  3. Spread cream cheese mixture on top of crust. Then place in freezer for 30 minutes to let set. Once set and chilled, take out and top with sprinkles.
  4. Cut into 12 slices place back in freezer to chill and let set further. When ready to eat, take out and enjoy!

FAQ: Christmas Cheesecake Crunch Bars

Do I have to use Nature Valley bars for these cheesecake bars?

You can use any crunchy granola bar that you love! I personally think the Oats ‘n Honey bars give the perfect amount of sweet and crunch but any type of crispy, crunchy granola bar will work. You could also use crushed up graham crackers! I just don’t recommend using chewy granola bars are these will not produce the crunchy crust we want!

Can I make these bars dairy-free?

Yes, to make this cheesecake recipe dairy-free just use dairy-free Greek yogurt, dairy-free cream cheese and dairy-free whipped topping. You can also use vegan/dairy-free sprinkles.

Can I freeze these cheesecake bars?

Yes! I actually recommend storing these cheesecake bars in the freezer. Bars will stay good in the freezer for up to 3 months.

Ingredients

Crust:

  • 10 Nature Valley Crunchy Oat and Honey Bars (210g) crushed
  • 1/4 cup light butter (56g) melted – I used I can't believe it's not butter light
  • 1/4 cup granulated zero calorie sweetener

Cheesecake Layer:

  • 8 oz. fat free cream cheese (224g)
  • 3/4 cup nonfat Greek yogurt (170g)
  • 1/4 cup granulated zero calorie sweetener
  • 1 tsp clear vanilla extract optional
  • 8 oz lite cool whip (226g)
  • 3 Tbsp festive sprinkles (36g)

Instructions

I recommend letting sit in freezer for at least an hour before eating. Keep stored in an airtight container in the freezer for up to 3 months.
