Ingredients

Crust:

  • 10 Nature Valley Crunchy Oat and Honey Bars (210g) crushed
  • 1/4 cup light butter (56g) melted - I used I can't believe it's not butter light
  • 1/4 cup granulated zero calorie sweetener

Cheesecake Layer:

  • 8 oz. fat free cream cheese (224g)
  • 3/4 cup nonfat Greek yogurt (170g)
  • 1/4 cup granulated zero calorie sweetener
  • 1 tsp clear vanilla extract optional
  • 8 oz lite cool whip (226g)
  • 3 Tbsp festive sprinkles (36g)

Instructions

  • In a large bowl, stir together crushed granola bars, melted butter and sweetener until well mixed. Press the mixture into a 9x9-inch baking pan that has been generously sprayed with nonstick baking spray.
  • In a mixer, beat together the cream cheese, yogurt, sweetener, and vanilla. Add cool whip at the end and beat just enough to combine.
  • Spread cream cheese mixture on top of crust. Then place in freezer for 30 minutes to let set. Once set and chilled, take out and top with sprinkles.
  • Cut into 12 slices place back in freezer to chill and let set further. When ready to eat, take out and enjoy!

Notes

I recommend letting sit in freezer for at least an hour before eating. Keep stored in an airtight container in the freezer for up to 3 months.
