About This Recipe

Perfectly sweet, perfectly soft, and bursting with so much buttery chocolate chip goodness, these Healthy Chickpea Blondies are most definitely one of my new favorite desserts!

Not only are they so incredibly tasty, but they were one of the easiest desserts I have made to date. Healthy, macro-friendly, delicious, AND easy? What on earth more could we want here?!

Ingredients and Substitutions

  • Chickpeas
  • Almond butter (or other nut butter of choice) – I used American Dream Nut Butter Bundle Up Blondie (use code Laurenfitfoodie to save!)
  • Butter extract – love the flavor this brings but if you don’t have, vanilla will do
  • Protein powder – I used PEScience vanilla. (You can save 10% on PEScience products with my affiliate code LaurenFitFoodie)
  • Syrup – I used Walden Farm’s pancake syrup
  • Banana
  • Mini chocolate chips – I used Enjoy Life mini chocolate chips 

Optional Variations and Dietary Adaptations

To make vegan: use a vegan protein powder (like PEScience’s SELECT Vegan protein) and a brand of chocolate chips and pancake syrup that is vegan and dairy-free too. I love Enjoy Life chocolate chips for this!

To make paleo: use a brand of protein powder, syrup and chocolate chips that are Paleo-approved. PEScience’s vegan protein is made partially from brown rice powder, so not technically considered paleo. Because they do not contain soy like most chocolate chips, Enjoy Life chocolate chips are considered Paleo by the Paleo Foundation.

How To Make

  1. Preheat oven to 350 °F and spray 9×9 inch baking pan with cooking spray.
  2. In a blender or food processor, add all the ingredients except the chocolate chips and blend until smooth. Remove the blade and stir in half of the chocolate chips.
  3. Add batter to baking pan and spread out evenly. Then sprinkle the remaining chocolate chips on top. Bake for 20-25 minutes, or until toothpick inserted in center comes out clean.
  4. When done, let cool, then keep covered and stored in the fridge. They taste best the next day when the flavors come together!

How To Enjoy Chickpea Blondies

To be quite frank, I ate the majority of these blondies straight up! They have all the flavor and yummy goodness you need right in them and they hit the spot for a mid-afternoon snack. But thinking about next time, some other great ideas would be:

  1. Crumbled on top of protein fluff or ice cream
  2. With cool whip on top (OK update – tried it this way and holy yum)
  3. With cream cheese or nut butter on top (SO GOOD)
  4. On top of a yogurt bowl or jello yogurt bowl
  5. With a big ol’ glass of chilled milk!

How To Store

Once bars have cooled, place them in the refrigerator overnight. This will allow the flavors to come out more and bring about a more sweet, buttery flavor. They just taste so much better the next day and so much better chilled. Trust me here!

FAQ: Chickpea Blondies

How do I get my blondies to not turn out cakey?

There are a couple reasons your blondies can turn out cakey. If you use different ingredients than the ones listed or over-baking your blondies. Be sure to take the blondies out when a toothpick comes out mostly clean! That will help keep the gooey, blondie texture!

Can I use a different brand of protein powder or leave it out altogether?

Not all protein powders bake the same, so just make sure you are using one you know bakes well. If you want to use another brand, make sure it is also a whey + casein OR a plant-based blend. Whey blends don’t bake as well. Or, you can omit the protein powder. Just substitute with an equal amount of flour (30g or 1/4 cup).

Can I freeze these blondies?

To freeze, let blondies cool to room temperature and then cut into bars. Wrap the bars individually in parchment paper, wax paper, or aluminum foil. Then, store in a Ziploc bag. To prevent freezer burn, make sure to remove as much air as possible. If stored properly, bars will stay fresh for 6 months.

Ingredients

  • 1 (15-oz) can chickpeas (270g) rinsed and drained
  • 1/4 cup almond butter (56g) I used American Dream Nut Butter Bundle up Blondie
  • 1 medium ripe banana (120g)
  • 1/4 cup sugar free maple syrup (60g)
  • 1 tsp butter extract
  • 1/4 cup protein powder (31g) I used PEScience vanilla
  • 1/2 tsp baking soda
  • 2 tbsp mini chocolate chips (28g)
