Easy Mac and Cheese Bites

Three cheese, protein-packed macaroni and cheese bites! These bites are low in calories, tasty and so fun to make!

These Mac and Cheese bites are straight up fire. Cheesy pasta made even more tasty (and more macro friendly!) with added egg whites and cheese. Not to mention they are just straight up FUN to eat.

For the Mac and Cheese, I used Banza Chickpea pasta. This stuff is super tasty. I’m especially fond of the white cheddar flavor. Love that it has protein in it too to make it easier to fit into my macros. Honestly, it tastes just as good as “normal” pasta to me, so I knew I wouldn’t be missing anything!

These bites are also crazy easy to make! All you gotta do is follow the box instructions to make the mac and cheese, and the rest is easy peasy!

WHY YOU’LL LOVE THESE MAC AND CHEESE BITES

  • Minimal ingredients – just 4-5 main ones depending on if you use the same shredded cheese or not!
  • EASY to make – just two steps: make the pasta then make the bites!
  • They are fun – kids love making and eating these! And okay, adults too (I am raising my hand here)
  • Just 40 calories per bite! Say whhhaaaaaaat!
  • Packed with protein – not only are these mac and cheese bites low in calories, but they also have more protein than your standard mac and cheese.

WHAT YOU NEED

  • Box of Mac and cheese – I used Banza to keep protein higher
  • Milk (for the Mac and cheese)
  • Egg whites
  • Shredded cheese – I used a mixture of fat free and 2% shredded, but you can use whatever you want to here!
  • Seasoning of choice – I love using hidden valley ranch seasoning but there are many that would work well for this recipe!

Mac and Cheese Bites

Mac and Cheese Bites

Three cheese, protein-packed macaroni and cheese bites! These bites are low in calories, tasty and so fun to make!

Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • 1 box (142g dry) Banza white cheddar mac and cheese chickpea pasta
  • 3 tbsp milk (to make mac and cheese)
  • 1 cup + 1/4 cup (305g) egg whites
  • ¼ cup (28g) 2% shredded cheddar cheese
  • ¼ cup (28g) fat free shredded cheddar cheese
  • 1 tsp seasoning of choice (I used hidden valley ranch for half and Tony's Creole for half - both amazing!)

Instructions

  1. Cook mac and cheese as instructed on box, stirring regularly to prevent any clumps.
  2. Preheat oven to 350 °F. Spray mini muffin pan(s) with cooking spray.
  3. When mac and cheese is done, use a small spoon to scoop into muffin pan. This comes out to about 20g of mac and cheese each.
  4. If you have a pourable bowl, I would add your egg whites in their first, whisk and then add the seasoning. If you don't, simply sprinkle with seasoning and then pour egg whites from carton (after shaking) on top of the mac and cheese. This should fill the mini muffin pans to the top and comes out to about 15g of egg whites for each bite.
  5. Bake for 10-15 minutes, or until egg whites have cooked.
  6. Take out and evenly sprinkle with cheese. Add back into oven for another 5-10 minutes, or until cheese has melted.
  7. When done, let cool, grab some ranch or honey mustard to dip, and enjoy!
