About This Recipe
Are you a huge fan of fruity pebbles? Do you love drinking the cereal milk as much as you love the actual cereal? Then this fun recipe is for you! I combine two of my favorite treats (ice cream and cereal) and make the most OUT OF THIS WORLD Fruity Pebbles Ice Cream!
So how do you get delicious, creamy ice cream using the crunchy cereal? Easy! Make a batch of cereal milk but combining the fruity pebbles (or cereal of choice) and your choice of milk. Let that mixture steep until you get all the delicious sugary milk you typically find at the bottom of the bowl and strain using a fine mesh strainer. Next, combine your cereal milk with remaining ingredients, set your pint container in the freezer for 12-24 hours, then run through your ninja creami ice cream machine and enjoy!
If you haven’t joined the ninja creami community yet, I highly recommend jumping on board! I swear my ninja creami ice cream maker was my most used kitchen appliance last year and I have no intention of slowing down anytime soon.
If you have any extra cereal milk, I highly recommend making a batch of my cereal milk overnight oats! Or if you’re looking for more ice cream recipes, try my ninja creami vanilla ice cream, peanut butter protein ice cream, strawberry cheesecake ice cream or strawberry sorbet!
Why You’ll Love This Fruity Pebbles Protein Ice Cream
- Your favorite fruity cereal in a creamy, frozen treat!
- The easiest way to make homemade ice cream! Easy to prep multiple pints in advance!
- The best healthy sweet treat!
- High protein! Over 30 grams of protein per pint!
- Enjoy the whole pint or split into 2-3 servings! See tips for refreezing!
- Fruity Pebbles: The key ingredient for this cereal milk ice cream. I love the fruity flavor mixed with the creamy vanilla ice cream base but you can use your favorite breakfast cereal!
- Milk: I used a combination of 2% Fairlife milk and unsweetened almond milk. The higher fat content in the 2% milk helps gives this ice cream some creaminess so I like making sure I use both to keep calories lower but the consistency right. However, you can use any type of milk. Skim milk, 2%, whole milk, coconut milk, almond milk, cashew milk, etc.
- Protein powder: I used PEScience vanilla protein powder (code Laurenfitfoodie to save!) but any protein should work here so just use your favorite protein powder. Use a plant-based dairy-free protein powder if needed.
- Sugar-free pudding mix: This helps to add flavor and also acts as a thickening agent. I used sugar-free white chocolate but vanilla pudding mix or cheesecake will work too!
- Liquid stevia: I prefer to use liquid sweetener as I think it mixes in better but any type of sweetener (liquid or granular) will work. You can also sub for honey or pure maple syrup.
- Different cereal: Use any of your favorite cereals you love to make this recipe! Try it with fruit loops, honey smacks, golden grahams, lucky charms, frosted flakes, etc.
- Make it chocolate: Use chocolate Fairlife milk, chocolate protein powder and chocolate sugar-free pudding mix and cocoa pebbles!
- Make it vegan: Use your favorite dairy-free milk, vegan protein powder and vegan pudding mix.
How To Make
The full printable recipe is below, but let me walk you through the process so you know what to expect when you’re making it!
1. To make the cereal milk, add 2 cups of Fruity Pebbles and 2.5 cups of milk to a pitcher or large glass. Stir vigorously and refrigerate for 20-30 minutes.
2. Drain the milk through a fine-mesh strainer. Depending on the size of your strainer you may need to work in batches. Use a spoon to press the cereal down and help get the milk through, no need to press excessively though, you should get about 1.5 cups of cereal milk from it.
3. Add the cereal milk to a blender or food processor. Add 1 cup additional milk (any kind), the protein powder, pudding mix and sweetener.
4. Blend until combined. You can also use an immersion blender here. Taste to see if it’s sweet enough for you and add more sweetener as needed.
5. Pour base into two empty Creami pints. Freeze for 12-24 hours.
6. When ready to enjoy, run the bottom of the pint and sides under hot water for 1 minute to defrost. Then run through the gelato cycle.
7. Use a knife to knife to scrape along the sides and remove any ice. Add 1-2 tablespoons of cream or milk if powdery or too thick. Run through the light ice cream cycle.
8. Make a well in the center and add 2 Tbsp (18g) fruity pebbles. Run through the mix-in cycle. Respin as needed to desired consistency. Sprinkle more fruity pebbles on top and enjoy!
If you don’t finish the full pint, you can save the rest for later! Use a spoon to smooth and level out the top of the remaining ice cream in the Ninja Creami container and place back in the freezer. When ready to eat, re-spin the frozen pint until desired consistency.
If you want to save your leftovers in another container, transfer the leftover ice-cream to another container and freeze. To enjoy, let it thaw on the container for a bit or microwave it for 5-10 seconds to soften.
Ninja Creami Tips!
- Prep in advance. I have found that I don’t necessarily need to wait 24 hours, but if I make this ice cream the morning of, say 8 hours in advance, I am good!
- Avoid Icy Edges. Run the container under hot water for 30 seconds before running it through the ninja creami machine (or let sit out on the counter for 15-20 minutes). After the initial spin, run a butter knife or spoon along the sides and re-spin.
- Additional Re-spins. If you like your ice cream more like soft serve, you can re-spin 2-3 times before adding in your mix ins. This will soften the ice cream. If you like your ice cream more scoop-able, I recommend sticking with 1 re-spin.
- Don’t overfill the container. The ice cream will expand in volume as your re-spin so don’t worry if it looks like the pint isn’t initially full. For best results, make sure to leave adequate room in the container so the ice cream can spin correctly to make the best, most creamy ice cream.
Why does my ninja creami have a weird powdery texture after the first spin?
It is normal and expected for the ice cream base to be crumbly and powdery after the first spin. The second spin (especially when you add a little more liquid) is when the magic happens! If ice cream is still not to desired consistency after first re-spin, you do an additional 2-3 re-spins (until desired consistency).
Do I have to wait 24 hours for my pint to freeze?
I have found that I don’t necessarily need to wait 24 hours, but if I make this ice cream the morning of, say 8 hours in advance, I am good!
Can I use a protein shake instead of protein powder for this recipe?
Yes, if you want to use a protein shake instead of protein powder just use your protein shake of choice (like the Fairlife shakes or premier protein shakes) in place of the milk to make the cereal milk. Then omit the protein powder when mixing the rest of the ingredients.
