Ingredients

Meatballs:

  • 1 tsp olive oil
  • 3/4 cup finely diced yellow onion (85g)
  • 1.5 lb lean ground beef - I used 96/4
  • 1/4 cup Italian breadcrumbs (28g)
  • 1 large egg
  • 2 Tbsp sugar-free ketchup (30g)
  • 1 Tbsp low-sodium soy sauce
  • 1 tsp each: Italian seasoning & salt
  • 1/2 tsp black pepper

Sauce:

  • 1/4 cup sugar-free ketchup (60g)
  • 1 Tbsp low-sodium soy sauce
  • 1 Tbsp brown sugar I used Truvia
  • 1/2 tsp garlic powder

Instructions

  • Preheat the oven to 350 degrees F. Spray a 12-cup muffin tin with cooking spray and set aside.
  • Heat olive oil in a large skillet over medium heat. Add the onion and cook, stirring occasionally, until the onion is tender. Then remove from heat and set aside.
  • In a large bowl, combine the beef, breadcrumbs, egg, ketchup, soy sauce and seasonings. Mix just until combined (don’t over mix). Then roll into 12 even sized balls (about 2 Tbsp/70g each). Place meatballs in the prepared muffin pan.
  • Mix all the sauce ingredients in a small bowl then spoon over the meatballs. Smooth the top of each meatball evenly with the back of your spoon.
  • Bake meatballs for 24-28 minutes (I did 25 minutes) or until no longer pink when cut through the center.
  • Serve with sides of choice! See ideas in notes.
