These Pepperoncini Chicken Bites are packed with bold and zesty flavor! Perfect for throwing in a wrap, enjoying with your favorite dipping sauce or topping a salad. Plus, they’re ready in just 20 minutes!

Ingredients

  • 1 lb. boneless chicken breasts
  • 2 Tbsp ranch seasoning mix (14g)
  • 3 Tbsp unsalted butter (42g) divided
  • 1 oz. grated parmesan cheese
  • 3 cloves garlic minced (or frozen cubes)
  • 6 pepperoncini peppers stems removed & diced (+2 Tbsp juice from jar)
  • Crushed red pepper flakes optional

Instructions

  • Pat chicken dry with a paper towel then cut into bite size pieces (about 3/4 to 1-inch). Place in a bowl, add the ranch seasoning mix and toss to coat.
  • Heat one tablespoon butter in a cast iron or stainless steel skillet over medium heat. Add half the chicken bites, leaving space in between. Cook for 3-4 minutes undisturbed or until golden brown (charred if using cast iron).
  • Toss/flip and cook the other side until golden brown and cooked through, about 2-3 minutes more. Transfer chicken bites to a plate. Melt another tablespoon of butter and cook the remaining chicken.
  • Reduce heat to low. Add remaining tablespoon of butter, the minced garlic and all the chicken bites back to the pan. Saute for 1-2 minutes more, until the garlic is fragrant, then remove from heat and toss with grated parmesan, the diced pepperoncinis and 2 Tbsp juice from the jar. Sprinkle red pepper flakes over top, serve and enjoy!
