This Easy Strawberry Grilled Chicken Salad just screams spring and is a delicious blend of sweet and savory flavors. It combines juicy grilled chicken, ripe strawberries, crisp greens, creamy goat cheese and crunchy walnuts.

Ingredients

  • 8 oz. cooked grilled chicken breast
  • 2 cups chopped romaine lettuce (80g) or leafy greens of choice
  • 1 cup sliced strawberries (140g)
  • 1/4 cup chopped red onion (30g)
  • 1/4 cup chopped pecans (28g)
  • 1/4 cup crumbled goat cheese (28g)
  • Dressing of choice for serving (see notes)

Instructions

  • Prepare ingredients: rinse the strawberries, pat dry with a paper towel and cut into slices; finely chop the red onion and pecans (lettuce too if not already prepared); slice the chicken breast.
  • Serves 2. Divide everything between two bowls or meal prep containers. Keep dressing stored separately until ready to serve.
  • Serve as is for lower carb, or with croutons, toasted bread, crackers, half a sandwich, etc. for a more macro-balanced meal. Chop and toss when ready to eat and enjoy!

Notes

In these photos I used a poppyseed dressing which pairs delicious with this strawberry pecan salad! The dressing is not included in nutrition information. Use your favorite dressing– a balsamic vinaigrette or tangy honey mustard would also be delicious with this!
