This Easy Strawberry Grilled Chicken Salad just screams spring and is a delicious blend of sweet and savory flavors. It combines juicy grilled chicken, ripe strawberries, crisp greens, creamy goat cheese and crunchy walnuts.
2cupschopped romaine lettuce (80g)or leafy greens of choice
1cupsliced strawberries (140g)
1/4cupchopped red onion (30g)
1/4cupchopped pecans (28g)
1/4cupcrumbled goat cheese (28g)
Dressing of choicefor serving (see notes)
Instructions
Prepare ingredients: rinse the strawberries, pat dry with a paper towel and cut into slices; finely chop the red onion and pecans (lettuce too if not already prepared); slice the chicken breast.
Serves 2. Divide everything between two bowls or meal prep containers. Keep dressing stored separately until ready to serve.
Serve as is for lower carb, or with croutons, toasted bread, crackers, half a sandwich, etc. for a more macro-balanced meal. Chop and toss when ready to eat and enjoy!
Notes
