This healthy Chicken Caesar Wrap is just like a chicken caesar salad in wrap form!! It's packed with hearty chicken, crunchy croutons and LOADED with tons of taste-bud-popping caesar flavor! The perfect grab-and-go no-reheat lunch or quick lunch at home!
1/4cupgrated parmesan cheese - freshly grated is best!
1Tbsplemon juice
1/4tspeach: garlic powder & black pepper
4piecesgreen lettuce or romaine lettuce
4spinach tortillasI used Mission carb balance spinach
Instructions
In a medium bowl, combine the chicken, caesar dressing, croutons, parmesan, lemon juice, garlic powder and black pepper.
Lay the tortilla out and place the lettuce on top (it will pretty much cover the whole tortilla). Scoop 1/4 of the chicken mixture on top. Fold the tortilla lengthwise over the filling, tuck in the sides, and roll into a secure wrap. Repeat for each wrap.
Slice in half and enjoy! If meal prepping, slice wraps in half and store in an airtight container in the fridge.
Notes
To make gluten-free: use a gluten-free wrap of choice and gluten-free croutons. To make dairy-free: use dairy-free cheese and dairy-free caesar dressing. If you the homemade dressing, you will just wants to sub the greek yogurt for a dairy free yogurt.The Most Legit Tasting Low Calorie Caesar Salad Dressing
3/4 cup plain nonfat Greek yogurt (170g)
1/4 cup freshly grated parmesan cheese (28g) - fresh makes a HUGE difference!
2 Tbsp lemon juice (30g)
1 Tbsp light mayo (15g)
1 Tbsp olive oil (15g)
1 tsp anchovy paste (5g)
6 drops of liquid stevia, or to taste, optional but I think it elevates the flavor!
1 clove garlic
Salt & fresh cracked pepper, to taste
Add all ingredients to a blender or food processor along with 1/8 tsp salt and a few cracks of pepper. Blend until smooth. Taste and add any additional salt, pepper, mustard, parmesan, etc. as needed. Store in a jar or airtight container. For best results, allow dressing to chill for 30 minutes before serving.
