This super easy Quesadilla for One is the perfect recipe for all your busy weeknights on-the-go! Ready in less than 10 minutes, this cheesy, crunchy quesadilla is packed with protein and will leave you feeling so much better than take-out.

Instructions
Spray a skillet with nonstick cooking spray and set to medium heat. Add onions, peppers, onion powder, cumin, salt and pepper. Cook until tender, about 5 minutes, then stir in shredded chicken and cook for another minute. Remove from the skillet and set aside.
Spray the skillet with more cooking spray and add tortilla. Add cheese to one half of the tortilla and spread out evenly.
Place the chicken and vegetable mixture on top of the cheese side and fold the other half of the tortilla over top. Use a spatula to press down. Cook until the bottom is golden brown; carefully flip the tortilla to the other side and cook for another minute or until the other side is golden brown too.
Remove from the skillet, add toppings and enjoy!
