70gLFF Basic Shredded Chicken or other shredded chicken - can pick another protein and log separately
Instructions
Spray a skillet with nonstick cooking spray and set to medium heat. Add onions, peppers, onion powder, cumin, salt and pepper. Cook until tender, about 5 minutes, then stir in shredded chicken and cook for another minute. Remove from the skillet and set aside.
Spray the skillet with more cooking spray and add tortilla. Add cheese to one half of the tortilla and spread out evenly.
Place the chicken and vegetable mixture on top of the cheese side and fold the other half of the tortilla over top. Use a spatula to press down. Cook until the bottom is golden brown; carefully flip the tortilla to the other side and cook for another minute or until the other side is golden brown too.
