This super easy Quesadilla for One is the perfect recipe for all your busy weeknights on-the-go! Ready in less than 10 minutes, this cheesy, crunchy quesadilla is packed with protein and will leave you feeling so much better than take-out.

Ingredients

  • 1 La Banderita Carb Counter Tortilla
  • 3 Tbsp reduced-fat Mexican shredded cheese (21g)
  • 1/2 cup onion or onions and peppers (60g) diced
  • 1/4 tsp onion powder
  • 1/8 tsp pepper
  • 1/8 tsp salt
  • 1/8 tsp cumin
  • 70 g LFF Basic Shredded Chicken or other shredded chicken - can pick another protein and log separately

Instructions

  • Spray a skillet with nonstick cooking spray and set to medium heat. Add onions, peppers, onion powder, cumin, salt and pepper. Cook until tender, about 5 minutes, then stir in shredded chicken and cook for another minute. Remove from the skillet and set aside.
  • Spray the skillet with more cooking spray and add tortilla. Add cheese to one half of the tortilla and spread out evenly.
  • Place the chicken and vegetable mixture on top of the cheese side and fold the other half of the tortilla over top. Use a spatula to press down. Cook until the bottom is golden brown; carefully flip the tortilla to the other side and cook for another minute or until the other side is golden brown too.
  • Remove from the skillet, add toppings and enjoy!
