You and your family are going to love this easy and healthy Sloppy Joe Biscuit Bake recipe. It makes weeknight meal time easy because it's quick, balanced, and absolutely delicious!

Ingredients

  • 1 lb. 96% lean ground beef
  • 1 medium yellow bell pepper (140g) diced
  • 1 yellow onion (170g) diced
  • 8 oz. bella mushrooms finely diced
  • 1/2 cup 2% shredded Colby jack cheese (56g) 56g
  • 1 10.2-oz. can GRANDS homestyle buttermilk biscuits (5 ct.)

Sloppy Joe Sauce:

  • 1 8-oz. can tomato sauce (226g) I recommend Muir Glen brand
  • 1/2 cup sugar-free ketchup (120g) I used G Hugh’s
  • 2 cloves garlic minced
  • 2 Tbsp Worcestershire sauce (30g)
  • 1 Tbsp brown sugar (12g)
  • 2 tsp dry mustard
  • 1 tsp onion powder

Instructions

  • Preheat the oven to 350 degrees F. Spray a 8x11” baking dish with cooking spray (a 9x13” also works). Start by washing and preparing your veggies. 
  • To a large skillet, add the ground beef and season with salt and pepper to taste. Cook on medium heat, stirring frequently and breaking into smaller pieces as you go, until beef is no longer pink. Transfer the cooked beef to a large mixing bowl. 
  • Spray the same skillet with cooking spray. Add the diced pepper, onions and mushrooms and cook on medium heat until veggies are tender, about 6-7 minutes. Transfer the veggies to the same large mixing bowl with the beef. 
  • To a separate mixing bowl, add all the sloppy joe sauce ingredients. Whisk to combine. Pour sauce into the bowl with the beef and veggies and stir to combine. 
  • Add sloppy joe mixture to the prepared baking dish. Sprinkle cheese evenly across. 
  • Cut each biscuit into four pieces and place evenly across the top. 
  • Bake for 25 minutes*, or until the tops of biscuits are golden brown.

Notes

*I like the doughy taste of the the bottom of the biscuits, but if you wish to have them cooked completely, you can flip and bake another 10-15 minutes, do the same but broil for a minute, or just bake the biscuits separately and cut in quarters/top on the sloppy joe back at the end!
