This Healthy Ham and Cheese Quiche tastes like it came straight from the bakery! Fluffy eggs, a flaky crust, and hearty ham and cheese taste so delicious. It also holds up well in the fridge, making it great for meal prep!
3/4cupyellow onion, finely diced (110g)~1/2 medium onion
2large eggs
3/4cupegg whites (180g)or 4 additional eggs
3/4cupmilk (180g)of choice*
2clovesgarlicminced
3/4tspItalian seasoning
1/2tspsalt + pepper to taste
8oz.(~1 cup) diced ham leftover ham works too
1/2cupshredded cheddar (56g)
1/4cupshredded mozzarella cheese (28g)
2Tbspfreshly chopped herbsany on hand or you can omit
Instructions
Preheat the oven to 375 degrees F. Gently transfer the pie crust to a pie dish.
Spray a small skillet with cooking spray and set to medium-high heat. Add the diced onion and cook for 3-5 minutes or until soft and translucent. Remove from heat and allow to cool slightly.
Whisk the eggs in a large bowl until lightly beaten. Then whisk in the egg whites, milk, minced garlic, Italian seasoning, salt and pepper (you can add more or less salt and pepper to taste). Stir in the sautéed onions, ham, both cheeses, and fresh herbs.
Bake on the lower oven rack for 37 to 45 minutes, or until set along the edges and only slightly jiggly in the center.
Top with more fresh herbs to serve.

PRO TIP! Transfer pie crust to pie dish directly out of the freezer. The longer it sits out, the easier it will be to break. You do not need to bake pie crust before adding the filling.*Milk: Any milk will work here, but just note different milks will result in slightly different consistencies. To keep things light, i've found a can of evaporated milk works good to keep things creamy. Whole or 2% work good too. If using fat free milk, maybe replace a few tablespoons of milk with heavy cream to balance things out! You can also use half and half here, or dairy free milk, or omit completely and replace with cottage cheese.Herbs: Love the flavor fresh herbs bring but if you don't have any on hand you can omit or just throw in any dried spices you're feeling! Pie crust: any deep dish pie crust works (store bought or homemade) for a low carb option, you can also omit pie crust completely.To make gluten-free: use a gluten-free pie crust.
