Get your burrito fix without the mess and stress of rolling your favorite fillings in a tortilla with this Deconstructed Beef Burrito Casserole. It takes less than 30 minutes from start to finish and packs all of the yummy Mexican flavors!

Ingredients

  • 2 lb. ground beef - I used 96/4 you can also use ground turkey, ground or shredded chicken
  • 1.5 cups cooked rice (225g) I used microwavable - see notes for cauliflower rice*
  • 2.5 cups mild or medium salsa (600g)
  • 1 4-oz. can chopped green chiles
  • 3/4 cup corn kernels (127g) frozen, canned or roasted
  • 1/2 cup canned black beans (72g) drained and rinsed
  • 2-3 Tbsp fresh cilantro chopped
  • 1 tsp chili powder
  • 1/2 tsp each: salt, cumin, onion powder
  • 1 cup shredded cheese (112g)

Instructions

  • Preheat the oven to 375 degrees F. Spray a baking dish with nonstick cooking spray.
  • Brown the ground beef in a large skillet over medium-high heat. Season with salt and pepper to taste and cook until no longer pink, breaking into crumbles as you go.
  • To the prepared baking dish, add the cooked rice, cooked beef, salsa, green chiles, corn, black beans, cilantro, seasonings and 1/2 cup shredded cheese. Spread mixture into the prepared baking dish. Top with remaining 1/2 cup shredded cheese.
  • Bake uncovered until bubbly and cheese is melted, about 15 minutes. Top with more cilantro, sour cream (or Greek yogurt) & whatever else sounds yummy and enjoy!

*Using cauliflower rice instead of rice will keep the protein and fat the same and make this dish a little more lower carb (14g carbs instead). If you want to use cauliflower rice, a 10-oz. frozen bag is the perfect amount. Just microwave, drain any excess water and use just as you would the rice.

Serving suggestions:

Scoop with chips – normal tortilla chips or Quest chips for some extra protein! You can also make your own chips: Cut up some Joseph’s Lavash (or Cut Da Carb) into triangles, spray with cooking spray and bake in the oven for 5-8 minutes on broil or until desired crispiness.
Burrito – Don’t want it deconstructed? Just throw in a tortilla. This is what Simon does every time I make this!
Salad – Place your deconstructed burrito over some greens kinda like a Chipotle salad bowl!
