Ingredients

Roasted Broccoli:

  • 1.5 lb. raw broccoli cut small florets
  • 2 Tbsp. olive oil (30g)
  • 1/2 tsp. salt
  • 1/4 tsp. fresh ground pepper

Honey Mustard Salmon:

  • 1/2 cup honey (168g)
  • 1/2 cup Dijon mustard (120g)
  • 24 oz. Atlantic salmon 6 fillets 4oz in size

Instructions

  • Broccoli: Preheat the oven to 425 degrees F and grease a large sheet pan.
  • Add the broccoli and toss with the olive oil, salt and pepper until evenly coated. Spread into an even layer and roast for 12–15 minutes, tossing halfway through, until tender.
  • Salmon: Turn the oven to broil (550℉) and position a rack about 6 inches from the top. Lightly grease a sheet pan or line with foil (you can reuse the broccoli pan once it’s out of the oven).
  • Pat the salmon dry with a paper towel and season with salt and pepper. Arrange on the sheet pan.
  • In a small bowl, stir together the honey and Dijon. Spoon about 1 tablespoon of the glaze over each salmon fillet, brushing it over the tops and sides.
  • Broil for 7–9 minutes, brushing with a little more glaze halfway through, until the salmon flakes easily with a fork.
  • Serve the salmon with the roasted broccoli, drizzle with extra honey mustard if you’d like, and enjoy 🤍

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently in the air fryer or in a skillet over low heat to avoid drying out the salmon.
