These Sausage French Toast Roll Ups are the ultimate sweet and savory breakfast combo. Juicy breakfast sausage links are wrapped in soft bread, dipped in a cinnamon-egg mixture, and cooked until golden brown for the perfect fun weekend breakfast or meal prep.

Ingredients

  • 12 slices butter bread or any sandwich bread
  • 12 cooked sausage links see notes
  • 3 large eggs
  • 2 Tbsp milk (30g)
  • 2 Tbsp granulated sugar (24g)
  • 1 tsp pure vanilla extract
  • 1/2 tsp cinnamon
  • 1.5 Tbsp unsalted butter (21g)

Instructions

  • Roll each slice of bread with a rolling pin and cut off the crusts.
  • Place a sausage link at one end of the bread slice and roll up. Repeat for all the bread and sausage.
  • In a medium bowl, whisk the eggs, milk, sugar, vanilla and cinnamon.
  • Warm a skillet over medium heat. Melt the butter.
  • Dip each roll up in the egg mixture and add to the buttered skillet.
  • Pan fry, turning every so often, until golden brown on all sides.
  • Serve with maple syrup to dip if desired and enjoy!

Notes

Sausage: can use pork or turkey sausage links. Nutrition calculated using Butterball turkey sausage links.
