Looking for a quick, satisfying lunch? These Apple, Grape & Walnut Chicken Salad Wraps are just the ticket! Made with juicy grapes, crisp apples, tender chicken and toasted walnuts to bring the perfect balance of flavors and textures!
2oz.sharp cheddar cheesethinly sliced from a block (or 4 slices)
Mayo, mustard, condiments of choiceoptional
Pickle spears, chips, other sidesoptional
Instructions
Chicken salad: Roughly chop the chicken and toss in a large bowl. Add the apples, grapes, red onion, mayo, cottage cheese, lemon juice, dijon mustard, walnuts, salt, pepper and dill. Mix until well combined. Add more salt and pepper to taste. If there’s a bite, sweeten it with a little honey.
Wraps: Lay tortillas out. Spread a little mayo and mustard down the center, if desired.
Place cheese in a line down the center of the tortilla (if using sliced cheese, break it in half).
Spread about 1 cup chicken salad on top.
Fold the ends of the tortilla in then fold the wrap up. Repeat for all or make one at a time.
Serve with a pickle and chips or your favorite lunchy sides and enjoy!
