This copycat Heavenly Hunks recipe tastes just like the real deal but healthier! These easy no-bake cookies are sweet, chewy and make the best snack or gluten-free dessert!
Add 1/3 of the oats, about 3/4 cup, to a food processor and grind into a fine flour.
Add the rest of the oats, plus the coconut, potato starch, brown sugar and salt. Pulse a little more to break the oats and coconut into smaller pieces. If your food processor is small, you may need to pulse in parts and transfer everything to a large mixing bowl.
Add coconut oil and honey to your pyrex (or microwave safe bowl) and microwave for about 30 seconds or until warm. Pour into the dry ingredients and mix to combine. Then fold in the chocolate.
Transfer to a 8x8-inch dish lined with parchment paper and press down very firmly. You can spray a piece of parchment paper with cooking spray to help press the oat mixture down.
Freeze for at least an hour then take out and use a sharp knife to cut into 16 squares. Keep big or cut into fours to get small chunks like Heavenly hunks. Keep stored in a freezer safe bag in the freezer and enjoy!

*Potato starch acts as a binder here to help hold the oat bites together. You can use another starch, like arrowroot, tapioca or cornstarch in its place. Or you can omit, oat bites may just be a little more crumbly.You can store in an airtight container in the refrigerator for up to 2 weeks. I prefer to store mine in the freezer. Stored in the freezer these bites will last up to 3 months. You can eat cold straight from the freezer, let thaw on the counter for a few minutes or pop the microwave for 8 seconds.
