Your child's favorite snack just got a serious upgrade! These Homemade Uncrustables are the best healthy, budget-friendly alternative to the infamous crustless sandwiches. This homemade version is SO easy to make and I love that you can swap for a few healthier alternatives or adjust for allergies as needed. Plus, you can make as many as you want since they're perfect for storing in the freezer.

Ingredients

  • 16 slices sandwich bread see notes
  • 1/2 cup peanut butter (120g)
  • 1/2 cup jelly (144g) grape, strawberry, any! I used reduced sugar

Instructions

  • Line a baking sheet with parchment paper (one that can fit in your freezer). Lay out the slices of bread.
  • Spread one tablespoon of peanut butter into a circle in the center of four of them (leaving about ½-inch all around from the crust).
  • Spread one tablespoon of jelly into a circle in the center of the remaining four slices.
  • Put the sandwich together then use a sandwich cutter to press the edges and remove the outer crust.
  • Place the uncrustables back on the baking sheet and freeze for 2 hours or until frozen.
  • Once frozen you can pack into individual sandwich bags or put them all into a gallon size bag.

Notes

To store: make sure to store in a freezer-safe bag to prevent freezer burn and to get all the air out. Stored this way these homemade uncrustables will stay fresh for 3 months!
To defrost, simply place in the fridge overnight or let sit at room temperature until defrosted. 
Bread - any bread works! Macros calculated with Dave’s White Done Right Thin-Sliced (healthier than white bread but not super whole grainy for those picky eaters). You can use high fiber or protein bread to increase the fiber and protein, or plain ole white bread if you prefer. Use your favorite and feel free to switch it up!
