This Blueberry Goat Cheese Salad is a spring and summer staple that is so simple but insanely delicious and easy to make! It only requires 5 ingredients and is ready in less than 10 minutes. Perfect with your favorite protein as a meal or side salad to any dish!

Ingredients

  • 5 cups greens loosely packed
  • 1 cup fresh blueberries (140g)
  • 1/2 medium red onion (120g) thinly sliced
  • 1/4 cup walnuts or pecans (28g) chopped
  • 4 oz. goat cheese

Instructions

  • Add the chopped walnuts (or pecans) to a small skillet (toss with oil or cooking spray first if desired), then toast over medium-low heat for 2-5 minutes, stirring occasionally, until brown. Watch carefully so they don’t burn! Then remove from heat.
  • To a large bowl, add the mixed greens, blueberries, sliced red onion, toasted walnuts and goat cheese. Toss to evenly combine. 
  • If serving immediately, go ahead and toss with dressing. If not, you can store salad separately so that the salad keeps fresh longer.

Notes

Recommend dressings: 
  • Light raspberry vinaigrette - the raspberry flavor goes so good with it!
  • Creamy balsamic vinaigrette - I absolutely love the balsamic tang this one brings and the creaminess is another delicious touch!
