This Grilled Chicken with Balsamic Blueberry Basil Sauce will absolutely blow you away! It's the ultimate summer protein with juicy grilled chicken topped with a sweet blueberry sauce that will have you wanting to lick the dish clean!

Ingredients

  • 2 lb. boneless skinless chicken breasts
  • 1 Tbsp unsalted butter
  • 1/2 cup fresh or frozen blueberries (105g)
  • 1/3 cup blueberry preserves (96g)
  • 1/3 cup balsamic vinegar (80g)
  • 2 Tbsp dijon mustard (30g)
  • 1 Tbsp honey (21g)
  • 3 Tbsp freshly chopped basil

Instructions

  • Pound chicken to an even thickness then season both sides with salt and pepper to taste. I did 1/2 tsp salt and 1/4 tsp pepper total. 
  • Heat butter in a large skillet over medium heat. Add the chicken and cook, covered, for 3-4 minutes each side, or until internal temp reaches 165F. Transfer to a plate and set aside. You can also grill the chicken on the grill if you prefer! 
  • In the same skillet, combine the blueberries, preserves, vinegar, mustard and honey. Stir with a wooden spatula to scrape the browned bits from the pan and bring to a boil. Cook, stirring frequently for 5-6 minutes or until thickened, then remove from heat. Taste and add additional sweetener if needed (I ended up adding a little extra honey, but stevia or any sweetener would also work). 
  • Spoon over the chicken, then sprinkle with freshly chopped basil to serve. 

Notes

To make dairy-free: use dairy free butter or olive oil.
