If you're looking for your new favorite macro-friendly comfort food, this is it! This Macro-friendly Cheeseburger Quesadilla is the perfection combination of a juicy burger melted into a cheesy, crispy tortilla. 35g of protein and it's ready in 10 minutes!

Ingredients

  • 1 lb. ground beef I used 96/4
  • 1/2 cup sugar-free ketchup (120g)
  • 2 Tbsp yellow mustard (30g)
  • 1 tsp worcestershire sauce
  • 1 cup 2% shredded sharp cheddar (112g)
  • pickle chips for serving
  • 4 flour tortillas I used carb balance
  • special sauce optional for serving

Instructions

  • Cook beef in a skillet over medium heat, crumbling as you go, until brown, then remove from heat. Stir in the ketchup, mustard and worcestershire sauce and season with salt and pepper to taste.
  • Now, get all your ingredients ready! Wipe the skillet clean and spray with cooking spray. Set to medium heat. Place the tortilla flat in the skillet. Sprinkle cheese across the whole tortilla (1/4 cup each). Add the beef mixture to one side (118g each). Top with pickles (as many as you want) then fold the tortilla in half over the beef side. Press down with a spatula to seal the quesadilla and cook until golden brown.
  • Enjoy alongside special sauce + whatever else sounds good and enjoy!

Notes

Meal Prep Tip: you can go ahead and make all four in advance or just make the beef mixture and prepare each  quesadilla whenever you’re ready to eat. To store for later, wrap quesadilla tightly in foil and store in a ziplock bag.
